I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.)

OATMEAL BLUEBERRY ORANGE MUFFINS

Categories     Bake     Muffin

Yield 24 muffins

Number Of Ingredients 13

2 cups plain rolled oats
2 cups whole wheat flour
2 t baking powder
2 t baking soda
2 t salt
3 cups flaked sweet coconut
grated rind of 2 oranges
2 eggs
1 cup honey
2/3 cup oil
2 T vinegar
2 cups orange juice
2 cups frozen or fresh blueberries

Steps:

  • Preheat oven to 350. Combine dry ingredients and wet ingredients in separate bowls; add wet to dry and stir until just moist. Fold in blueberries. Pour batter into lined muffin tin carefully. Bake 20-25 minutes.

Tips:

  • Use fresh oranges. Fresh oranges provide the best flavor and nutrition for your muffins.
  • Zest the oranges before juicing them. This will help to release the essential oils from the orange peel, which will give your muffins a more intense orange flavor.
  • Don't overmix the batter. Overmixing can make your muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups only 2/3 full. This will allow the muffins to rise properly.
  • Bake the muffins at a moderate temperature. This will help to prevent them from drying out.
  • Let the muffins cool completely before frosting them. This will help to prevent the frosting from melting.

Conclusion:

Orange oatmeal muffins are a delicious and healthy breakfast option. They're easy to make and can be enjoyed by people of all ages. Whether you're looking for a quick and easy breakfast or a special treat, orange oatmeal muffins are a great choice.
