ORANGE-GINGER GLAZED SALMON

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)
3 tablespoons soy sauce
2 tablespoons olive oil
Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
  • Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.

Salmon is one of the world's healthiest foods. Rich in omega-3 fatty acids, selenium, vitamins D and B12, and protein, it's an absolute powerhouse of good nutrition. Better yet, it tastes great! Perfect for the hot days of summer the sweet orange-ginger glaze has just a tinge of heat from hot pepper flakes. If you prefer, an indoor grill or saute pan can be used to cook the salmon. Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

1/4 cup lime juice (about 2 large limes)
1/4 cup light orange juice
1/4 cup low-sugar orange marmalade
2 teaspoons freshly grated ginger or 1 teaspoon powdered ginger
1/2 teaspoon dried mustard
1 pinch salt
1 dash hot pepper flakes
2 teaspoons butter
4 (5 ounce) salmon fillets, rinsed and dried

Steps:

  • Combine the lime juice, orange juice, orange marmalade, ginger, mustard, salt and pepper flakes in a small saucepan and bring to a boil. Reduce the heat and simmer on low heat for 5 minutes. until reduced to almost half. Remove from heat; swirl in the butter. Set aside.
  • While sauce is cooking, place salmon on a hot grill and cook for 5 minutes per side, or until fish flakes easily when tested with a fork.
  • Spoon sauce across salmon and serve.

Tips:

  • Choose the right salmon. Look for a fillet that is firm and has a vibrant color. Avoid any salmon that is slimy or has a grayish tint.
  • Use fresh oranges and ginger. The fresher the ingredients, the better the flavor of the glaze will be. If you don't have fresh oranges, you can use bottled orange juice, but be sure to choose a brand that is 100% juice and has no added sugar.
  • Don't overcook the salmon. Salmon is a delicate fish, so it's important to cook it just until it is cooked through. Overcooked salmon will be dry and tough.
  • Serve the salmon immediately. Glazed salmon is best served hot out of the oven. If you need to make it ahead of time, you can cook the salmon and then store it in the refrigerator for up to 2 days. When you're ready to serve, reheat the salmon in a preheated oven until it is warmed through.

Conclusion:

Orange-ginger glazed salmon is a delicious and easy-to-make dish that is perfect for any occasion. The bright citrus flavor of the oranges pairs perfectly with the sweet and spicy ginger, and the glaze creates a crispy crust that seals in the salmon's natural moisture. Whether you're serving it for a weeknight dinner or a special occasion, this salmon dish is sure to impress your guests.
