2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1-3/4 cups warm 2% milk (110° to 115°)
1 cup sugar
2 large eggs, room temperature
3 tablespoons butter, melted
1-1/2 teaspoons salt
7 to 8 cups all-purpose flour
FILLING:
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 tablespoon thawed orange juice concentrate
1/2 teaspoon vanilla extract
GLAZE:
2 cups confectioners' sugar
3 tablespoons orange juice
1 teaspoon grated orange zest

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, sugar, eggs, butter, salt and 5 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , In a small bowl, beat cream cheese, sugar, orange juice concentrate and vanilla until smooth. Punch dough down. Turn onto a lightly floured surface; divide in half. Roll 1 portion into an 18x7-in. rectangle. Spread half the filling to within 1/2 in. of edges., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices; place cut side down in a greased 13x9-in. baking pan. Repeat with remaining dough and filling. Cover and let rise until doubled, about 30 minutes., Preheat oven to 350°. Bake rolls for 25-30 minutes or until golden brown. Combine confectioners' sugar, orange juice and zest; drizzle over warm rolls. Refrigerate leftovers.

6 frozen bread dough rolls, thawed
4 teaspoons butter, softened
2 tablespoons sugar
1 teaspoon orange juice
1/2 teaspoon grated orange zest
ORANGE GLAZE:
1/2 cup confectioners' sugar
1 tablespoon orange juice
1/8 teaspoon grated orange zest

Steps:

  • On a lightly floured surface, roll each piece of dough into an 8-in. rope. Flatten to 1-1/2-in. wide strip. Combine the butter, sugar, orange juice and zest; spread over dough. Roll up jelly-roll style, starting with a short side. Pinch ends to seal. Place in a greased 8-in. square baking dish. Cover and let stand in a warm place until doubled, about 45 minutes., Bake at 350° for 18-22 minutes or until golden brown. Combine glaze ingredients and drizzle over warm rolls.

Very low fat breakfast rolls with fresh orange, dried cranberries, honey, and cardamom. I really like these rolls any time of day. Good plain or with an orange glaze.

1 large orange
⅓ cup honey
1 tablespoon vegetable oil
2 cups bread flour
1 cup whole wheat flour
1 teaspoon salt
2 teaspoons bread machine yeast
¾ cup packed brown sugar
¾ cup sweetened dried cranberries
1 teaspoon ground cardamom

Steps:

  • Zest the orange; set zest aside. Peal and seed orange; cut orange fruit into chunks. Combine zest and fruit in a blender and puree. Pour orange pulp into bread machine pan.
  • Add honey, oil, white flour, wheat flour, salt, and yeast to the orange pulp. Select dough setting, and start the bread machine. Adjust consistency with orange juice or flour as needed to achieve a soft pliable dough.
  • When dough cycle is complete divide dough into 2 or 3 pieces. Roll out to a thickness of 1/4 inch. Sprinkle with brown sugar, cardamom, and dried cranberries. Roll up dough with goodies inside, and slice 1 to 2 inches thick. Place rolls in a baking pan coated with non-stick spray. Allow enough room between the rolls so that they rise properly. Let rise in a warm spot for approximately 1 hour.
  • Bake in a preheated 375 degrees F (190 degrees C) oven for 20 to 25 minutes. Remove from pan, and place on wire rack. Serve warm.

2 c whole milk
1/2 c vegetable oil
1/2 c granulated sugar
1 pkg active dry yeast
4 1/2 c all purpose flour
1/2 tsp rounded baking powder
1/2 tsp baking soda
1 tsp salt
8 Tbsp butter, melted
8 Tbsp orange marmalade
1 c light brown sugar
dash(es) salt
2 oranges, zest and juice
4 c confectioners' sugar
dash(es) salt
1/2 c whole milk
4 Tbsp butter, melted

Steps:

  • 1. In a large pan on low heat, bring the milk, oil, and sugar to 125 F on a candy thermometer. Remove from heat, add the yeast, 4 cups of the flour, cover, and let rise for at least an hour.
  • 2. After rising, add the remainder of flour, the baking powder, baking soda, and salt. Mix well.
  • 3. Take the dough and spread out on a floured surface. Roll to a large rectangle about 30"x10". Spread the 8 tablespoons melted butter all over. Spread the marmalade as well and finish with the brown sugar and sprinkle of salt.
  • 4. Roll the dough up jelly roll style keeping it tight as you go. Pinch the seam at the end to seal and slice into 1/2" slices. Place slices in a buttered baking dish and let rise for another 20 minutes.
  • 5. Bake in a preheated 375 degree F oven for about 15-17 minutes.
  • 6. Make the icing before the rolls are finished. In a medium bowl whisk together the confectioner's sugar, the zest and juice of 2 oranges, the milk, and the 4 tablespoons melted butter. Pour icing over the hot rolls when they come out of the oven. Yummy!!!

1/4 cup chopped pecans
1/4 cup sugar
1 teaspoon ground cinnamon
2 tablespoons plus 1-1/2 teaspoons Mascarpone cheese, divided
1 teaspoon grated orange zest
1 tube (6 ounces) refrigerated flaky buttermilk biscuits
2 tablespoons butter, melted
1/2 cup confectioners' sugar
2 teaspoons orange juice

Steps:

  • Sprinkle pecans into a 6-in. round baking pan coated with cooking spray; set aside. In a small bowl, combine sugar and cinnamon. In another bowl, combine 2 tablespoons Mascarpone cheese and orange zest; set aside. , On a lightly floured surface, roll out biscuits into 4-in. circles.
