1 tablespoon olive oil

2 tablespoons unsalted sunflower seeds, toasted

Steps:

  • Wash and dry beet roots and greens. Shred greens to measure 2 cups and set aside.

1 tablespoon extra-virgin olive oil
Salt and freshly ground pepper
20 large pearl onions, about 1/2 pound
2 oranges, peeled and cut into wedges
2 tablespoons hazelnut oil
1 tablespoon coarsely chopped fresh coriander leaves (also known as cilantro) plus extra for garnish
1/2 cup freshly squeezed orange juice
2 tablespoons hazelnuts, toasted and peeled
1-ounce pecorino, optional, grated on medium-sized holes of box grater

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the stems and tails off the beets. Do not peel. Line the bottom of a baking pan with foil. Place the beets in the pan and toss them with half of the olive oil, salt and pepper. Roast for 25 minutes.
  • Trim both ends off the pearl onions. Then toss them with remaining olive oil and salt and pepper. Add pearl onions to the beets and roast an additional 15 minutes, until beets and onions are tender.

3 oranges, preferably navel, peeled and separated into segments (can sub blood oranges or tangerines)
1/4 cup coarsely chopped mint leaf
3 teaspoons minced shallots
1 cup french feta cheese (can sub blue cheese or goat cheese) or 1 cup Greek feta cheese, crumbled into large pieces (can sub blue cheese or goat cheese)

Steps:

  • Preheat the oven to 400°F.
  • In a bowl, toss the beets with the olive oil and season them with salt and pepper. Put the beets on a roasting pan and cover them with foil. Roast in the preheated oven until tender, about 1 1/2 hours. (They are done when a sharp, thin-bladed knife can easily pierce through to their center.) Remove the pan from the oven, remove the beets from the pan and set them aside to cool.

8 blood oranges
1/4 cup coarsely chopped flat-leaf parsley

3 tablespoons champagne vinegar
1 small shallot, minced
1 teaspoon honey
1/8 teaspoon sumac, plus more for sprinkling (see Note)

1 tablespoon extra virgin olive oil

freshly ground black pepper
3 ounces feta, crumbled (1/2 cup)

Steps:

  • Spread the beets in a large steamer basket and steam until tender, about 15 minutes. Transfer the beets to a bowl and let cool completely.

Coarse salt
3 seedless oranges
5 tablespoons freshly squeezed lime juice
2 1/2 tablespoons freshly squeezed orange juice
1 teaspoon sugar
1/4 cup peanut oil, preferably unrefined
1 medium jicama, brown skin and exterior layer removed, cut into 4-by-2-inch slices
4 cups wild baby arugula
2/3 cup roasted, salted peanuts
1 piece sugar cane (3 to 4 inches), peeled and cut lengthwise into slivers

Steps:

  • Fill a small saucepan with water. Bring to a boil and add salt. When water returns to a boil, reduce heat to a simmer. Add beets and cook until tender, about 20 minutes. Drain and let cool. Cut beets into 4-by-2-inch slices; place in a large bowl.
  • Using a zester or vegetable peeler, zest the rind of one of the oranges. Finely chop and add to another large bowl along with the lime juice, orange juice, 1/2 teaspoon salt, sugar, and oil. Mix well and pour over beets; let stand 1 hour.

6 fennel bulbs, trimmed (fronds reserved), halved lengthwise, thinly sliced crosswise

Steps:

  • Preheat oven to 400°F. Wrap beets in foil. Place on baking sheet. Roast beets until tender, about 1 1/2 hours. Cool. Peel beets; cut into rounds.

1 1/2 pounds beets
2 cups shredded beet greens
1 large orange
2 Granny Smith apples - peeled, cored and sliced
1 tablespoon olive oil
1 tablespoon raspberry vinegar
1/2 teaspoon white sugar

1 clove garlic, minced
2 tablespoons unsalted sunflower seeds, toasted

Steps:

  • Wash and dry beet roots and greens. Shred greens to measure 2 cups and set aside. Place beets in a sauce pan with enough water to cover. Bring to boil, cover, reduce heat and simmer for 20 minutes or until tender. Drain and allow to cool. Trim and peel off skins; cut into 8 wedges. Peel and section orange. In a bowl, combine orange sections, beets and apples. Whisk together olive oil, vinegar, sugar, salt and garlic. Pour over beet mixture and toss well. Arrange 1/2 cup beet greens on 4 salad plates. Top with beet mixture, sprinkle with sunflower seeds and serve.

2 tablespoons olive oil
3 seedless oranges like navel
1/2 cup walnuts

1 medium head romaine lettuce, cleaned and torn into bite-sized pieces
1 1/2 tablespoons red wine vinegar

Steps:

  • Preheat the oven to 375 degrees. Wrap each beet in a piece of foil, sealing tight. Place all the beet packages on a foil-lined baking dish. Bake for 1 - 1 1/4 hours. Leave the beet packages on the baking dish, but carefully pull open a corner of the foil package to let the steam escape. Let the beet packages sit in this manner for 5-10 minutes. Carefully open the foil package more fully. Let the beet packages sit in this manner for an additional 5-10 minutes or until the beets can be handled comfortably. Slide your fingers over the surface of the beets and the skin of the beets will peel off easily. Cut the beets into wedges. Peel 2 of the oranges well, taking care to remove all the white pith, Carefully separate the peeled oranges into separate segments. Set aside. Squeeze the juice from the remaining orange. Set aside. In a bowl, combine 1 tablespoon of the walnut oil, sugar, salt and pepper. Add the walnuts and toss well to coat. Place the walnuts in a single layer on a baking dish and bake 5-7 minutes until the nuts are very hot to the touch and smell "nutty." Allow nuts to cool and chop coarsely. In a bowl, combine the orange juice, the olive oil, the remaining tablespoon walnut oil, red wine vinegar, and additional salt and pepper to taste. Toss the lettuce with three-quarters of the vinaigrette and spread on a platter. Toss the beets with the remaining vinaigrette. Top the nest of greens with a layer of beets.
