SPICY SPAGHETTI WITH CARAMELIZED ONIONS AND HERBS

Spicy Spaghetti With Caramelized Onions and Herbs image

Except perhaps for the fresh herbs, you probably have all the necessary ingredients to make this incredibly flavorful, easy pasta. The caramelized onions add sweetness to the salty olives and Parmesan, while red chile and garlic make the dish's flavors pungent and deep. A squeeze of fresh lemon right at the end brightens everything, adding a mild tang. Feel free to play around with the basic formula, swapping capers or even a small tin of sardines or tuna for olives, vinegar for the lemon, arugula or spinach for the parsley, and other cheeses (feta or pecorino) for the Parmesan.

Time 45m

Yield 3 to 4 servings

Number Of Ingredients 12

Kosher salt, as needed
1/4 cup extra-virgin olive oil
2 large white or Spanish onions, halved and very thinly sliced
12 ounces spaghetti
6 garlic cloves
1/2 teaspoon chile paste or red-pepper flakes, or to taste
2 anchovies, chopped (optional)
1 cup chopped mix of parsley and basil (or use all parsley)
1/3 cup chopped cured Moroccan or other intensely flavored black olives
2 tablespoons unsalted butter, cubed
Lemon wedges, for squeezing
Grated Parmesan, for serving (optional)

Steps:

  • Put a large pot of heavily salted water on and let it come to a boil.
  • Meanwhile, cook the onions: Heat 1/4 cup oil in a 12-inch skillet over medium heat. Add onions and cook, stirring occasionally, until tender and pale golden at the edges, 20 to 25 minutes. Lower heat if the edges start to brown too quickly or raise heat if onions aren't turning golden quickly enough.
  • When the water comes to a boil, cook spaghetti according to package directions until just al dente. Reserve 1 cup pasta water; drain pasta.
  • Thinly slice 4 garlic cloves, and stir into golden onions, along with red-pepper flakes. Continue to cook until onions are a rich brown, about 10 minutes longer. If the garlic starts to burn, lower the heat.
  • Finely grate remaining garlic cloves, and mash into anchovies using the flat side of your knife. Move some of the onion mixture to the side of the pan and add anchovy paste to bare spot in the skillet. Cook paste for 1 minute, then add herbs and olives, stir everything together, and cook another 1 minute.
  • Stir in cooked pasta, butter, and salt to taste, tossing to coat pasta. Add pasta water if it looks dry. Serve with a generous squeeze of lemon, and sprinkle with Parmesan and more chile on top, if desired.

ONE-POT FRENCH ONION PASTA

One-Pot French Onion Pasta image

Since my family is from both Italy and France, it seems like the perfect pairing to combine two of my favorite dishes: pasta and French onion soup! The little hollows in the cavatappi allow the caramelized onions and bone marrow to fill the center of each piece of pasta so they burst with beefy goodness with every bite.

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 17

2 tablespoons unsalted butter
2 tablespoons olive oil
3 large white onions, halved and sliced
1 teaspoon sugar
6 cloves garlic, sliced
Kosher salt and freshly cracked black pepper
2 pounds beef marrow bones, cut crosswise into 2-inch pieces
Vegetable oil
1 dried bay leaf
1 sprig fresh thyme
3 ounces brandy
3 ounces sherry
6 cups beef stock, plus more as needed
1 pound dried pasta, such as cavatappi
1/3 pound sliced provolone
1/3 pound sliced Swiss cheese
1 bunch chives, sliced

Steps:

  • Preheat the oven to 450 degrees F.
  • Melt the butter in the olive oil in a large, shallow broiler-safe pot over medium heat.
  • Add the onions and cook, stirring occasionally, until the onions soften, about 5 minutes. Stir in the sugar, garlic and 2 large pinches salt. Cover and cook, stirring every 5 to 10 minutes to prevent scorching, until the onions are golden brown, 35 to 40 minutes total.
  • Meanwhile, place the beef marrow bones on a large, rimmed baking sheet and toss lightly with the cooking oil. Roast the bones until the edges are browned and the marrow is soft and has begun to separate from the bone, about 12 minutes.
  • Use tongs to transfer the marrow bones to the pot with the caramelized onions. Tie together the bay leaf and thyme with kitchen twine. Add the herb bundle to the pot and season with pepper. Add the brandy and sherry and cook, stirring and scraping the bottom of the pot to remove any browned bits and cook off the raw alcohol flavor, about 2 minutes. Add the beef stock and bring to a boil.
  • Once the mixture is boiling, season with freshly cracked black pepper. Stir in the dried pasta and cook, adding more stock as needed, until the stock reduces, the marrow releases into the sauce and the pasta is al dente and glazed in the sauce, 9 to 12 minutes.
  • Meanwhile, preheat the broiler to high.
  • Remove and discard the herb bundle and marrow bones from the pot. Taste and adjust the seasoning with salt and pepper. Top the pasta with the provolone and Swiss cheese (see Cook's Note). Broil until bubbly, 4 to 5 minutes.
  • Sprinkle with the sliced chives and enjoy!

BACON AND ONION PASTA

Bacon and Onion Pasta image

Building off of the simple but powerfully flavorful Italian dish pasta aglio, olio e peperoncino, this wondrous pantry recipe gets much of its flavor from bacon fat and caramelized onions. The one-two-three punch of spicy red-pepper flakes, aromatic garlic slivers and savory herbes de Provence bloomed in fat provides the umami-rich base for this easy workday meal. Red vermouth creates a rich, jammy pasta sauce edged with sweetness. Don't sleep on angel hair pasta: It's got the right airy bounciness that's excellent at soaking up seasonings. Threaded with parsley and Parmesan, these generously oiled noodles are a dream to eat.

Provided by Eric Kim

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 11

8 ounces bacon
2 medium red onions
1/4 cup extra-virgin olive oil
Kosher salt and black pepper
8 garlic cloves
1 teaspoon red-pepper flakes
1 teaspoon herbes de Provence
1 cup sweet red vermouth (vermouth rouge)
1 pound angel hair or capellini
1 cup finely chopped fresh parsley
1/2 cup finely grated Parmesan or Pecorino Romano

Steps:

  • Take the bacon out of its packaging with the slices still stuck together and place on a cutting board. Cut the bacon, still stacked, crosswise into ½-inch slices to create little bacon pieces, also known as lardons. Add to a large rimmed sheet pan. Halve and thinly slice the onions. Add to the sheet pan as well. Drizzle the olive oil over the bacon and onions, season with salt and pepper, and toss until evenly coated.
  • Place the sheet pan in a cold oven and then heat the oven to 450 degrees. Roast until the bacon has rendered much of its fat but is still pink and the onions are slightly charred in spots but not too dark, 20 to 25 minutes.
  • Meanwhile, bring a large pot of water to a boil. Smash the garlic cloves with the side of your knife and thinly slice them. When the bacon and onions have had their 20 to 25 minutes, remove the sheet pan from the oven and stir in the garlic, red-pepper flakes, herbes de Provence and vermouth. Place the pan back in the oven and continue cooking until the vermouth is almost evaporated, and the bacon and onions look jammy and caramelized but not burnt, 5 to 10 minutes.
  • Cook the pasta according to package instructions. (Don't overcook it, as angel hair can go from bouncy to soggy in seconds). Reserve 1 cup of the cooking liquid. Drain the pasta and return it to the pot.
  • Carefully transfer everything from the pan to the pot with the cooked pasta. Add the parsley and Parmesan to the pasta, and toss until evenly combined, adding some of the reserved cooking liquid if the sauce needs thinning out. Taste, adding more salt and pepper as needed, and serve immediately.

Tips:

  • Use a variety of onions: This recipe calls for three types of onions: yellow, red, and scallions. Using a variety of onions adds depth of flavor and texture to the dish.
  • Don't overcrowd the pan: When cooking the onions, make sure not to overcrowd the pan. This will prevent them from cooking evenly.
  • Cook the onions until they are caramelized: Caramelizing the onions brings out their natural sweetness and adds a rich flavor to the dish. To caramelize the onions, cook them over medium-low heat for about 30 minutes, or until they are golden brown.
  • Use a good quality pasta: The type of pasta you use will make a big difference in the final dish. Use a good quality pasta that is made with durum wheat. Durum wheat pasta holds its shape better than other types of pasta and has a more al dente texture.
  • Cook the pasta according to the package directions: Be sure to cook the pasta according to the package directions. This will ensure that the pasta is cooked properly.
  • Add the pasta to the sauce: Once the pasta is cooked, add it to the sauce and stir to combine. This will allow the pasta to absorb the flavors of the sauce.
  • Garnish with fresh herbs: Before serving, garnish the pasta with fresh herbs such as basil, oregano, or parsley. This will add a pop of color and flavor to the dish.

Conclusion:

This onion trio pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of three types of onions, caramelized onions, and fresh herbs creates a flavorful and aromatic dish that is sure to please everyone at the table.
