CREAMED ONION GRATIN

Creamed Onion Gratin image

This Creamed Onion Gratin is one of those timeless recipes that will always have a place at the Southern holiday table. If you've planned ahead, you already stored your surplus of spring Vidalia's to enjoy throughout the year. If not, any sweet onion will do. First, the onions are slowly caramelized to bring out (even more of) their ultra sweet flavor, and laced with sherry to add another dimension of taste. The tender onions are then tossed in a rich and creamy cheese sauce and topped with buttery panko crumbs. The results are baked into a bubbling golden brown casserole so good you'll want to eat it straight from the pan with a spoon.

Provided by Food Network

Time 1h30m

Yield s: 6 - 8 servings

Number Of Ingredients 8

3 pounds sweet onions (such as Vidalia, Walla Walla, or Maui onions)
3 tablespoons cream sherry
6 tablespoons unsalted butter, divided
1/4 cup all-purpose flour
1 cup whole milk, scalded
1 cup freshly grated Parmesan cheese
Kosher salt and pepper
1/2 cup panko crumbs

Steps:

  • Preheat the oven to 375 degrees. Lightly grease a gratin dish or medium casserole.
  • Cut off the root and tip of the onions. Slice in half length-wise and peel. Lay the cut-side of the onion down and slice length-wise into thick wedges.
  • In a Dutch oven or heavy pot, melt two tablespoons of butter over medium heat. Add the onions and cook, stirring occasionally, until soft and caramelized, about 40 minutes. Add the sherry and simmer until it evaporates. Remove the onions from the pan and pour through a fine mesh sieve. Let them drain while making the bechamel sauce. (Draining the onions prevents a runny gratin because the onions will continue to release more liquid in the oven.)
  • In the same Dutch oven, melt 3 tablespoons of butter over medium heat. Stir in the flour and cook for one minute. Add the scalded milk and cook, whisking constantly, until the sauce is very thick. Remove from the heat. Fold in the Gruyere and stir until completely melted. Season with salt and pepper, to taste. Add the onions to the cheese sauce and toss to thoroughly coat. Pour the onion mixture into the gratin dish.
  • Melt the remaining tablespoon of butter and toss with the panko crumbs. Sprinkle over the top of the onions and bake until bubbly and golden brown, about 30 minutes. Serve warm.

ROASTED SQUASH AND RED ONION GRATIN WITH QUINOA

Roasted Squash and Red Onion Gratin With Quinoa image

I have given you several winter squash gratins over the years; this is my favorite to date, because of the sweet layer of flavor of the roasted squash and the texture of the black quinoa.

Provided by Martha Rose Shulman

Categories     dinner, lunch, main course, side dish

Time 1h25m

Yield Serves 6

Number Of Ingredients 11

1 1/2 pounds butternut or kabocha squash, peeled, seeds and membranes removed, and cut in small dice (1/2 to 3/4 inch) (about 4 cups diced)
2 tablespoons extra virgin olive oil
Salt and freshly ground pepper to taste
1/2 red onion, chopped
1 leek, white and light green parts only, cut in half, cleaned thoroughly, and chopped
2 garlic cloves, minced
2 teaspoons fresh thyme
2 ounces Parmesan, grated (1/2 cup)
3 eggs
1/2 cup milk (2 percent)
1/2 cup cooked rainbow or black quinoa

Steps:

  • Preheat oven to 425 degrees. Cover a baking sheet with parchment or foil. Toss squash with 1 tablespoon of the olive oil and season with salt and pepper. Spread on baking sheet in an even layer. Place in oven and roast for about 30 minutes, stirring every 10 minutes, until tender and caramelized. Remove from the oven and turn the heat down to 350 degrees. You should have about 2 cups roasted squash.
  • Meanwhile, heat remaining olive oil in a medium skillet and add onion. Cook, stirring, until it begins to wilt, about 3 minutes. Add leek and a generous pinch of salt and cook, stirring, until onion and leek are tender, another 3 to 5 minutes. Add garlic and thyme and cook, stirring, until the garlic is fragrant, 30 seconds to a minute. Remove from the heat.
  • Oil a 2-quart baking dish or gratin. In a large bowl, beat eggs and add salt and pepper to taste (I use about 1/2 teaspoon salt). Whisk in milk. Add onions and leek mixture, squash, Parmesan and quinoa, and combine well. Scrape into the prepared baking dish.
  • Bake 35 to 40 minutes, until set and the top is lightly browned. Remove from the oven and allow to cool for 10 minutes or longer before serving.

FRENCH ONION SOUP AU GRATIN STUFFED MEATBALLS RECIPE - (4.4/5)

French Onion Soup au Gratin Stuffed Meatballs Recipe - (4.4/5) image

Provided by Karenna

Number Of Ingredients 23

For the onions:
1 Tablespoon olive oil
2 onions, halved and thinly sliced
1/2 Tablespoon fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup beef broth
1/4 cup red wine (I used Gallo Family Pinot Noir)
For the meatballs:
1 1/2 lbs ground beef
1/4 cup bread crumbs or ground oats (gluten free, if needed)
1 Tablespoon minced fresh parsley
1 teaspoon pepper
1 teaspoon kosher salt
1 egg
8 oz mozzarella cheese (about 1-2 oz into sixteen approximately half-inch cubes, to stuff the meatballs, the remainder shredded)
1/2 Tablespoon olive oil
Fresh chopped parsley for garnish, optional
For the sauce:
1 3/4 cup beef broth
1/4 cup red wine (I used Gallo Family Pinot Noir)
2 Tablespoons cornstarch
salt & pepper, to taste

Steps:

  • 1.In a large nonstick pan over medium-low heat, saute onions and butter stirring occasionally until golden brown and caramelized. 2.Add the thyme, salt, water, bouillon, and wine. Cook over medium heat until reduced by half. Let cool. 3.Combine the milk soaked bread, ½ cup panko, parsley, pepper, salt, and egg in a bowl and mix together until everything is a happy gloopy mess. Mix in the ground beef with your hands until the gloopy mess is evenly distributed into the meat. If necessary to make the meat formable, mix in additional ¼ cup of panko. 4.Grab a small handful of the meat and flatten in your palm. Add some cheese and onions, and fold meat over and around it, sealing the edges as best as you can. This is a messy process. Repeat until all meat has been stuffed. 5.In a large nonstick skillet, heat canola oil over medium high heat. Brown meatballs on all sides. Remove to an oven safe dish when browned. Don't worry about these cooking all the way through. They will finish cooking in the oven. 6.Make sauce by combining all ingredients in a saucepan, and simmering for 10 minutes. Pour over meatballs, and top the meatballs with any extra onions, with the shredded mozzarella cheese, and any extra provolone you didn't use to stuff the meatballs. 7.Bake at 350 for 30 minutes, Remove, top with fresh chopped parsley, and serve with mashed potatoes.

Leg of Lamb Roasted Over Potato-Onion Gratin Recipe - (4.2/5) image

Provided by ltrodrigu

Number Of Ingredients 24

For Lamb:
6 1/2 pound leg of lamb, patted dry
4 cloves garlic, 3 smashed into a paste, 1 halved
olive oil
salt
freshly ground black pepper
For Gratin:
2 1/2 pounds russet potatoes, peeled and thinly sliced
2 teaspoons chopped fresh thyme, divided
2 teaspoons sea salt, divided
2 teaspoon freshly ground black pepper, divided
6 garlic cloves, minced
4 teaspoons olive oil, divided
2 yellow onions, thinly sliced
1/2 cup dry white wine
For Salsa Verde:
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped fresh mint
1 teaspoon chopped fresh thyme
2 teaspoons Champagne vinegar, plus more as needed
1 teaspoon honey
1/4 cup olive oil, plus more as needed
a pinch of salt, plus more as needed
a pinch of freshly ground black pepper

Steps:

  • Prepare Lamb: Rub garlic paste all over lamb. Rub olive oil all over the leg, then generously season with salt and pepper. Set lamb aside at room temperature for 2 hours. Prepare Gratin: Preheat oven to 400 degrees. Choose a baking dish large enough to hold lamb comfortably. Rub interior of dish with the cut side of a halved garlic clove. In the dish, place potatoes, 1 teaspoon thyme, 1 teaspoon salt, 1 teaspoon pepper, garlic, and 2 teaspoons olive oil. Toss everything together and spread potatoes out in an even layer across dish. In a medium bowl, toss 2 yellow onions together with 1 teaspoon thyme , 1 teaspoon salt, 1 teaspoon pepper and 2 teaspoons olive oil. Evenly scatter onions over top of potatoes. Pour wine over vegetables. Place baking dish with gratin on lowest oven rack. If dish is not large enough to hold lamb and catch all drippings, place a baking sheet or piece of aluminum foil under dish. Place leg of lamb directly on rack above gratin and make sure baking dish is positioned so it catches all drippings. Roast 15 minutes, then lower oven temperature to 350 degrees. Continue roasting lamb until meat thermometer inserted into thickest part registers 125 degrees for medium-rare, about 1¼ hours. (For medium doneness, cook until temperature reads 135 degrees; for medium-well, 145 degrees.) Check gratin after 1 hour of cooking. If potatoes are fork-tender, remove gratin from oven. If the roast needs more cooking time, place (or leave) a baking sheet or aluminum foil on rack beneath lamb to catch drippings. Once lamb reaches desired doneness, transfer to a cutting board and let rest at least 10 minutes. While lamb and potatoes roast, make Salsa Verde: In a small bowl, mix parsley, mint, thyme, vinegar, honey, olive oil, salt and pepper. Add more olive oil, vinegar and salt as needed. Serve lamb with gratin and salsa verde alongside.

Tips:

  • Use the Right Type of Onions: Yellow onions are the most commonly used onions for French onion soup, as they have a strong flavor that stands up well to the other ingredients. However, you can also use white or sweet onions if you prefer.
  • Slice the Onions Thinly: The thinner you slice the onions, the better they will caramelize. Aim for slices that are about 1/8-inch thick.
  • Use a Large Pot or Dutch Oven: You will need a large pot or Dutch oven to cook the soup in, as it will need to hold all of the onions, broth, and cheese.
  • Cook the Onions Low and Slow: Caramelizing the onions is a slow process, but it is worth it. Cook the onions over low heat for at least 30 minutes, or until they are browned and caramelized.
  • Use a Good Quality Broth: The broth is an important part of the soup, so use a good quality broth that you enjoy the taste of. You can use beef, chicken, or vegetable broth, depending on your preference.
  • Don't Overcrowd the Pot: When you add the onions to the pot, don't overcrowd them. This will prevent them from caramelizing properly.
  • Add the Cheese at the End: The cheese is the final touch on the soup, so add it just before serving. This will help to prevent it from becoming rubbery.

Conclusion:

French onion soup is a delicious and comforting dish that is perfect for a cold winter day. By following these tips, you can make a delicious bowl of French onion soup that your family and friends will love.
