One-Skillet Cheesy Beef and Macaroni image

This is total comfort food; a one dish recipe, with even the pasta cooking in the same skillet.

Provided by Katie Workman

Categories     Main Course

Time 35m

Number Of Ingredients 15

2 pounds lean ground beef (85/15%)
1 tablespoon vegetable or olive oil
1 cup chopped red, yellow, orange, or green bell pepper
1 cup chopped peeled carrots
1 cup chopped onion
1 tablespoon minced garlic
1 teaspoon dried basil
2 teaspoons dried oregano
2 (28-ounce) cans crushed tomatoes in juice
2 cups water
1 tablespoon Worcestershire sauce
2 teaspoons chili powder (optional but recommended)
Kosher or coarse salt and freshly ground pepper (to taste)
¾ pound dried elbow macaroni
2 cups grated cheddar cheese ((8 ounces))

Steps:

  • Heat a very large skillet (for this full recipe, it should be a deep 12-inch pan) over medium high heat and brown the beef, stirring until no pink remains, about 5 minutes. Drain the beef and set aside.
  • Wipe out the skillet, add the oil, and heat it over medium heat. Add the peppers, carrots, onion and garlic and sauté until almost tender, about 5 minutes.
  • Add the ground beef back to the skillet, as well as the basil, oregano, tomatoes with their juice, water, Worcestershire sauce, and chili powder if using. Season with salt and pepper, turn the heat to high, and bring to a simmer. Add the pasta, stir and cover. Lower the heat to medium and simmer covered, stirring occasionally, until the pasta is tender, and most of the liquid is absorbed, 8 to 10 minutes. Taste and season again if needed.
  • Sprinkle the cheese over the casserole then cover for just 1 more minute until the cheese is melty, and serve. Serve this right out of the pan.

Time 40m

Number Of Ingredients 17

2 tablespoons olive oil
1 large/extra-large sweet vidalia onion, diced small
1 pound lean ground beef (I used 90% lean)
1 large/extra large red bell pepper, diced small
1 cup corn (I used frozen straight from the freezer)
1 cup elbow macaroni (dry, uncooked)
1 cup water
one 14.5-ounce can diced tomatoes (do not drain)
one 8-ounce can tomato sauce
1 tablespoon cumin, plus more if desired
1 tablespoon chili powder
2 teaspoons Mexican oregano (regular oregano may be substituted)
1 teaspoon kosher salt, plus more if desired
1 teaspoon freshly ground black pepper, or to taste
pinch cayenne pepper, optional and to taste
1 to 2 cups shredded cheese (I used a Mexican shredded cheese blend)
fresh cilantro, finely minced for garnishing

Steps:

  • To a large skillet, add the olive oil, onion, beef, and cook over medium-high heat until beef is cooked through and onion is soft and translucent, about 7 minutes; crumble beef and stir frequently to ensure even cooking.
  • Add the bell pepper, corn, macaroni, water, tomatoes, tomato sauce, cumin, chili powder, oregano, salt, pepper, stir to combine.
  • Lower heat to medium low, cover, and allow mixture to simmer for about 20 minutes, or until pasta is tender and cooked through. Stir a couple times while simmering to ensure even cooking.
  • Uncover, turn off the heat, add the cheese, and stir to combine and until melted. Taste and check for seasoning balance. If necessary add more salt or seasonings (I added an additional 1 teaspoon salt and 1 teaspoon of cumin).
  • Evenly sprinkle the cilantro and serve immediately.

Tips:

- Cook the pasta until tender but not mushy. The target is 'al dente', which means "to the tooth" in Italian. You want the pasta to have a slight bite to it. - Use a large skillet so that the pasta has plenty of room to move around and cook evenly. A 12-inch skillet is a good size for 1 pound of pasta. - When adding the pasta to the skillet, make sure that the water is boiling hot. This will help to prevent the pasta from sticking together. - Stir the pasta frequently while it is cooking. This will help to ensure that it cooks evenly and doesn't stick to the bottom of the skillet. - Add the cheese gradually, stirring constantly, until it is melted and smooth. This will help to prevent the cheese from clumping. - Serve the pasta immediately, garnished with additional Parmesan cheese, if desired. - To make a vegetarian version of this dish, omit the ground beef and add more vegetables, such as mushrooms, zucchini, and bell peppers. - To make a spicy version of this dish, add some red pepper flakes or chopped chili pepper to the sauce. - Leftover spaghetti mac can be stored in the refrigerator for up to 3 days. Reheat it in the microwave or in a skillet over low heat.

Conclusion:

One-skillet spaghetti mac is a quick and easy meal that is perfect for busy weeknights. It is also a great way to use up leftover spaghetti. This dish is loaded with flavor and is sure to be a hit with your family and friends. So next time you are looking for a quick and easy meal, give this one-skillet spaghetti mac a try. You won't be disappointed!
