4 boneless skinless chicken breast halves (4 ounces each)
4 thin slices fully cooked ham
4 thin slices Swiss cheese
3 tablespoons all-purpose flour
1 teaspoon paprika
1/3 cup butter
1/2 cup white grape juice
1 chicken bouillon cube
1 cup heavy whipping cream
1 tablespoon cornstarch

Steps:

  • Flatten chicken to 1/4-in. thickness. Top each with a slice of ham and cheese; fold to fit. Roll up tightly and secure with toothpicks. In a shallow bowl, combine the flour and paprika. Coat chicken with flour mixture. , In a large skillet over medium heat, melt butter. Cook chicken for 5 minutes on each side or no longer pink. Add grape juice and bouillon. Reduce heat; cover and simmer for 30 minutes or until chicken is tender., Remove chicken and keep warm. In a small bowl, combine cream and cornstarch until smooth. Gradually stir into pan juices. I love making Chicken Cordon Bleu which I usually bread, roll and bake. But I wanted something quick with the same ingredients and came up with this - lazy chicken cordon bleu made all in one skillet. This is great with roasted veggies or you can serve this with rice pilaf.

4 thin boneless (skinless cutlets, 4 oz each)
1/2 teaspoon kosher salt
1/4 cup all purpose flour*
1/2 teaspoon butter
1 1/2 teaspoons olive oil
2/3 cup reduced sodium chicken broth
1 tbsp fresh lemon juice
1/2 tablespoon Dijon mustard
4 thin slices low sodium deli ham (I use Boar's Head (3 oz total))
4 slices light Swiss Cheese such as Alpine Lace (3 oz total)
chopped fresh parsley (for garnish)
* All purpose gluten-free flour works well here.

Steps:

  • Season chicken with salt and pepper, to taste.
  • Place the flour in a shallow dish. Lightly dredge the chicken with flour on both sides, shaking off the excess reserving the flour.
  • In a small bowl combine the chicken broth, lemon juice, Dijon mustard and 1 teaspoon of the reserved flour, whisk until smooth.
  • Heat a large nonstick skillet over medium-high heat. Melt the butter and add 1 teaspoon of the olive oil and half of the chicken.
  • Cook 2 minutes on each side, until slightly golden, then transfer to a dish.
  • Add remaining 1/2 teaspoon olive oil and remaining chicken and cook 2 minutes on each side.
  • Set aside on a dish with the other pieces of chicken.
  • Reduce the heat to medium-low, add the chicken broth mixture. Whisk scraping up any bits stuck to the pan then simmer 2 minutes to reduce slightly.
  • Return the chicken to the skillet, top each piece with a slice of ham and a slice of swiss, cover the skillet and simmer medium-low for 3 to 4 minutes until the cheese melts.
  • To serve use a spatula and transfer the chicken to each dish, spoon the remaining sauce over each piece.

1/2 cup Gold Medal™ all-purpose flour

2 eggs
1 cup Progresso™ Italian style panko crispy bread crumbs (half 8-oz box)
1 lb thin sliced chicken breasts, rinsed, patted dry
8 very thin slices Swiss cheese (about 1/2 oz each)
4 slices deli cooked ham

Steps:

  • Heat oven to 400°F. In 10-inch ovenproof skillet, heat oil over medium heat. Meanwhile, in shallow bowl, stir together flour, salt and pepper. In second shallow bowl, beat egg. In third shallow bowl, place bread crumbs.

¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Kosher salt and freshly ground pepper
4 6-ounce skinless, boneless chicken breasts
1 cup shredded Gruyere cheese (about 3 ounces)
8 thin slices black forest ham
5 tablespoons extra-virgin olive oil
1 shallot, minced
1/2 teaspoon Dijon mustard
2 tablespoons white wine vinegar
2 cups baby greens
