Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs work best for this recipe. If you're using chicken breasts, pound them thin so they cook evenly.
  • Use a large skillet: A large skillet will help to prevent the chicken and vegetables from overcrowding and ensure that they cook evenly.
  • Cook the chicken first: Chicken takes longer to cook than the vegetables, so it's important to cook it first. Once the chicken is cooked through, remove it from the skillet and set it aside.
  • Use a variety of vegetables: This recipe calls for bell peppers, onions, and corn, but you can use any vegetables that you like. Other good options include zucchini, squash, carrots, and broccoli.
  • Season the chicken and vegetables well: A good blend of spices will help to add flavor to the chicken and vegetables. Be sure to season them liberally before cooking.
  • Use a flavorful sauce: The sauce is what brings all of the flavors together in this dish. Be sure to use a sauce that you enjoy, such as enchilada sauce, taco sauce, or salsa.
  • Serve with your favorite toppings: Once the burrito bowls are assembled, you can top them with your favorite toppings. Some good options include sour cream, guacamole, salsa, and cheese.
