1 small onion
2 cloves garlic
1/8 teaspoon cayenne pepper
1 teaspoon dried basil (or 1 tablespoon fresh)
1/2 teaspoon dried oregano
2 cups water
1 1/2 cups marinara sauce (or your favorite commercial spaghetti sauce )
3 tablespoons tomato paste
12 ounces thin spaghetti (dry, uncooked, broken into thirds)
Kosher salt and ground black pepper (to taste)
1 cup grated Parmesan cheese

Steps:

  • Gather the ingredients.

1 medium yellow onion, sliced
3 cloves garlic, sliced
Kosher salt and freshly cracked black pepper
1 pound tomatoes, medium diced
2 white anchovies
1/2 teaspoon crushed red pepper flakes
1 pound dried linguine or spaghetti
1/4 cup chopped fresh parsley
2 tablespoons salt-packed capers, rinsed
1 tablespoon unsalted butter
1/4 cup freshly grated Parmesan, plus more for serving

Steps:

  • Set up a grill for even, medium-high heat. If using a charcoal grill, build the coals evenly on the bottom.
  • Place a Dutch oven on the grill and coat the bottom with a film of olive oil, followed by the onions and garlic. Season with salt and pepper and cook until the onions begin to soften, 2 to 3 minutes. Stir in the tomatoes. Add the anchovies and, using a wooden spoon, break them down into small pieces.
