2 medium onions, thinly sliced

All-purpose flour, for dusting
1 sheet frozen puff pastry, thawed
1/4 cup oil-cured small black olives, pitted and halved lengthwise
4 to 6 anchovy fillets (optional), rinsed

Steps:

  • Preheat oven to 425 degrees. Melt butter with oil in a skillet over medium-high heat. Add onions and thyme, and cook until onions are golden and soft, about 10 minutes.
  • On a lightly floured surface, roll out pastry, and trim to an 8 1/2-by-15-inch rectangle. Place on a parchment-lined baking sheet, transfer to oven, and immediately reduce oven to 400. Bake until pastry begins to rise, about 12 minutes.
  • Arrange onions in a single layer over pastry, leaving a 1-inch border around edge. Top with olives and anchovies if using. Bake for 15 minutes. 5 slices sandwich bread (Pepperidge Farm white bread is best)
mayonnaise as needed
1 small Vidalia or sweet onion, thinly sliced

  • 1. Preheat the broiler.
  • 2. Toast the bread lightly in a toaster oven. Remove the crusts. Cut the slices with a 2-inch round biscuit cutter and spread the rounds lightly with mayonnaise. Put a slice of onion on top of each piece and spread with mayonnaise again. Broil until golden brown. Serve hot.

Store-bought puff pastry, rolled into 1 (10 by 12-inch) rectangle

  • Prepare the egg wash: Combine the yolks, whole egg, and milk in a small mixing bowl and whip with a hand whisk until well combined. Preheat the oven to 400 degrees. Set the puff pastry on a lightly floured work surface, with the long side facing you and cut in half from top to bottom. Use a pastry brush to coat one piece of the dough with egg wash. 2 large red onions , trimmed at the root and cut into thin wedges
2 tbsp light muscovado sugar
2 tbsp balsamic vinegar
375g sheet ready-rolled puff pastry

175g black olive , pitted and chopped
1 tbsp extra-virgin olive oil
