1 pound dried lasagna noodles
Olive oil
1 onion, chopped
2 cloves garlic, sliced
2 tablespoons fresh basil, chopped
2 tablespoons fresh oregano, chopped
3 bay leaves
1 1/2 pounds ground beef
1 pound ground Italian sausage
6 ounces tomato paste, (1 can)
30 ounces ricotta cheese, (2 containers)
1/4 cup Italian flat-leaf parsley, finely chopped
Salt and black pepper, to taste
2 eggs, lightly beaten
1/2 cup grated Parmesan cheese
4 cups tomato sauce, prepared
1 pound mozzarella cheese, shredded
Grated Parmesan and mozzarella, for topping

Steps:

  • Cook the lasagna noodles in plenty of boiling salted water until pliable and barely tender, about 10 minutes. Stir with a wooden spoon to prevent sticking. Drain the noodles thoroughly, coat with olive oil keep them moist and easy to work with.
  • Coat a large skillet with olive oil. Saute over medium heat, onion, garlic and herbs. Cook 5 minutes. Brown beef and sausage until no longer pink, about 15 minutes. Drain fat into a small container and discard. Stir in the tomato paste completely. Set aside to cool.
  • In a mixing bowl, combine ricotta, parsley and oregano. Stir in beaten eggs. Add Parmesan, season with salt and pepper.
  • To assemble the lasagna: Coat the bottom of a 13 by 9-inch pan with a ladle full of tomato sauce. Arrange 4 noodles lengthwise in a slightly overlapping layer on the sauce. Then, line each end of the pan with a lasagna noodle. This forms a collar that holds in the corners. Spread 1/2 of the meat mixture over the pasta. Dollop 1/2 of the ricotta mixture over the meat, spread to the edges with a spatula. Sprinkle 1/2 of the mozzarella on top of the ricotta. Top with a ladle full of tomato sauce, spread evenly. Repeat with the next layer of noodles, meat, cheeses and sauce. Top last layer with noodles, sauce and shredded mozzarella and Parmesan. Tap the pan to force out air bubbles. Bake in a preheated 350 degree oven for 1 hour. Remove from oven. Let lasagna rest for 30 minutes so the noodles will settle and cut easily. Cut into 2-inch squares and serve.

This is a copycat recipe posted by request -- I have not made this recipe, and so the times are just a guess. You have to practice making the frosting in order to get the consistency right. The filling is softer than the top frosting but the flavor is exactly the same (which is why you should use the same recipe for both). You should have no trouble finding clear almond and clear vanilla extract. The colorless butter flavor is a little more difficult. If you can't find it anywhere else, Wilton sells it online.)

6 cups cake flour
5 1/4 cups sugar
2 1/4 cups hershey's cocoa
2 tablespoons baking soda
4 1/2 cups milk
1 1/2 cups butter
12 large eggs
1 tablespoon vanilla extract
2/3 cup water
4 tablespoons meringue powder
12 cups sifted confectioners' sugar
1 1/4 cups shortening
3/4 teaspoon salt
1 teaspoon clear almond extract
1 teaspoon clear vanilla extract
1 teaspoon colorless butter flavoring
1 bag semi-sweet chocolate chips
Hershey's syrup

Steps:

  • Heat oven to 350°F Grease three 10-inch springform pans.
  • In mixing bowl, stir together sifted cake flour, sugar, Hershey 's Cocoa and baking soda. Add butter and mix well. Add milk, eggs and vanilla. Mix thoroughly.
  • Pour about 5 cups of the cake batter into each prepared pan. Bake 40 to 50 minutes or until toothpick inserted in cake center comes out clean.
  • Cool for 10 minutes before you remove the cake from the pan, then cool completely on a wire rack.
  • To make buttercream filling, combine water and meringue powder; whip at high speed until peaks form. Add 4 cups of sugar, one cup at a time, beating after each addition at low speed.
  • Alternately add shortening and remainder of sugar. Add salt and flavorings; beat at low speed until smooth. Thin out ½ of the frosting with a little extra water. The thinned frosting is used as the filling between layers.
  • To assemble the cake, place one 10 inch cake on a large round plate or a large round cake platter. Spread half of the thinned frosting on top, frosting only the top of the cake (not the sides). Sprinkle very lightly with semi-sweet chocolate chips. (There are very few chips on this layer, usually only 1 or 2 per wedge, so sprinkle very, very lightly).
  • Place the second cake on top of the first. Frost the top with the remaining thinned frosting. Sprinkle with semi-sweet chocolate chips. (You can be a bit more generous with this layer).
  • Place the third layer on top of the second. Frost the top with all of the butter cream that was NOT thinned. This is a thick layer of frosting so pile it on, and try to get the top as smooth as you can. Sprinkle with semi-sweet chocolate chips.
  • To serve, cut the cake into wedges, as you would cut a pizza. Using Hershey's chocolate syrup, create a design on your dessert plate. Place the wedge of chocolate lasagna at the 11 o'clock position on your dessert plate with the point facing down, so that you can see some of the syrup design.
  • NOTE: The frosting seems more authentic if you let it set up (sit out) for an hour at room temperature. Wrap the sides lightly with foil to keep the cake from drying out as well.

*NOTE:Recipe has been updated and fixed since the first review.** Like lots of people I had been seeing the commercial for Olive Garden's new dish, the Lasagna Rollatini with Fontina cheese sauce and wanted to try it soo bad. For those that haven't, a rolled up lasagna noodle stuffed with four cheeses and spinach, oven backed with a white cheese sauce with tomatoes and spinach. But like most times, i just haven't had time to go and try it. So after doing a lot of searching through ideas, I came up with my own Copycat version. My husband doesn't even want to try it now, saying it wouldn't have anything on this recipe! But he can be a little biases. :-) Let me know. Also, this makes a lot so can easily be halved, especially if you want to have some breaded chicken with it. This makes A LOT!

1 large head garlic, roasted
1 lb lasagna noodle
1 (15 ounce) container ricotta cheese (whole or reduced fat)
1 (10 ounce) box frozen spinach, defrosted, minus 3 tbs for sauce
1 1/2 cups parmesan four cheese blend (with Parmesan, Asiago, Fontina, Romano)
2 eggs, beaten
1 tablespoon parsley, to taste
1 tablespoon oregano, to taste
salt and pepper
1 tablespoon olive oil
3 tablespoons butter or 3 tablespoons margarine
1 tablespoon flour
16 ounces heavy cream or 16 ounces half-and-half
1 cup dry white wine (Sauvignon Blanc, Pinot Grigio, Pinot Gris, Pinot Blanc, Semillon or Chardonnay are all fine. Use wha) or 1 cup white wine vinaigrette (Sauvignon Blanc, Pinot Grigio, Pinot Gris, Pinot Blanc, Semillon or Chardonnay are all fine. Use wha)
1/2 cup grated parmesan four cheese blend (to taste)
1 roma tomato, diced small
3 tablespoons spinach (set aside from pasta)
1 tablespoon parsley
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Roast garlic. (Just cut the top off so all the cloves are showing, drizzle with olive oil, wrap in aluminum foil and pop in the oven for 30 minutes at 350°F).
  • Cook pasta according to package directions, just under fully cooked or nearly to the al dente point (until flexible enough to roll them up without breaking); drain very well.
  • Combine the rest of the lasagna roll ingredients until combined in a large bowl.
  • Lay out a noodle on a clean, dry surface.
  • Place a layer of cheese mixture down the noodle, making sure not to over stuff.
  • Roll up and place in a 9x13 baking dish lightly sprayed with cooking spray (Pam), seam down; repeat with the remaining noodles.
  • Set to the side.
  • Sauce: In a saute pan, heat olive oil over medium low heat.
  • Squeeze out roasted garlic paste and let it cook for about 1 minute.
  • Add butter.
  • Once melted, mix in flour, making a roux, cooking for about 1 minute.
  • Whisk in white wine, cooking for about 1-2 minutes, letting the alcohol cook out.
  • Add in heavy cream, letting it absorb the flavors for about a minute.
  • Then add the cheese, stirring until melted.
  • Add spinach, stirring until incorporated in sauce, and lastly the tomatoes.
  • Season with salt and pepper and add parsley.
  • Let simmer for about 5 minutes.
  • Pour over lasagna rolls, cover and bake in preheated oven for 30-35 minutes or until pasta is fully cooked and heated throughout and sauce is bubbling.
  • Serve and enjoy!

2 baby zucchini
2 baby grey summer squash
2 baby summer squash
1 (16 -24 ounce) jar pasta sauce (whatever your favorite is)
10 ounces mozzarella cheese, shredded

Steps:

  • Heat oven to 375 degrees F. Fill a large pot of water and bring to a rolling boil. Cook the pasta noodles until they are pliable, and mostly cooked. Remove and place in a bowl of cold water.
  • While the water is coming to a boil, slice the squash on a mandolin or thinly with a sharp knife. Set aside.
  • Place 1/2 cup of pasta sauce into the bottom of a 13x9 pan and spread around. Lay one noodle out on a cutting board or clean flat surface. Top in the middle third with 6 slices of squash. Fold the ends over the top and place folded ends down on the sauce. (This is a squash bundle) Continue with the remaining noodles, placing them next to each other in the sauce. You should have 2 rows of 6 bundles each.
  • Top with the remaining sauce and mozzarella. Cover with aluminum foil and bake for 30 minutes, until sauce is bubbly and cheese is melted.

Even though my roots are from Western Europe, I feel my blood is full of Italian.....can't get enough! If you want to wow them, put the extra time into this recipe. Make ahead and refrigerate or freeze until ready to use. First is a Sugo di carne (tomato sauce), then a Balsamella sauce (Italian white sauce). Update 4/2010: Due to 2 comments I'm suggesting you use 3-4 T flour to thicken sauce but not too thick that it won't pour easily on top, if too thick, add a little milk a tablespoons at a time. 3 tablespoons extra virgin olive oil
3 tablespoons butter
1 cup onion, finely diced
1/3 cup carrot, finely diced
1/4 cup celery, finely diced

2 1/2 cups tomatoes, pureed in a blender
1 pinch nutmeg
2 tablespoons milk or 2 tablespoons heavy cream

3 -4 tablespoons flour

7 ounces parmigiano-reggiano cheese, freshly grated (divided)
1 pinch nutmeg

Steps:

  • TOMATO SAUCE.
  • Place oil and butter in a saucepan, and turn the heat to medium.
  • When the butter starts foaming, add the diced onion, carrot, celery, and garlic.
  • Sauté and stir until the onion is soft and translucent.
  • This is the time to add the ground meat if using.
  • Stir with a wooden spoon, and break the meat into small bits. Cook until the meat is fully browned.
  • Add the wine, salt and pepper (to taste). Turn the heat to high, and let the wine evaporate. (Posting of 1/4 cup wine would not register correctly when entering recipe).
  • Add the tomato, nutmeg, and milk (milk helps cut down on acidity). When the sauce starts boiling, turn the heat to low.
  • Cover the saucepan and simmer slowly for about 1 hour, stirring occasionally.
  • WHITE SAUCE.
  • Place butter in a saucepan and turn the heat to low. When the butter is melted, remove the saucepan from the stove.
  • Add the flour, stirring continuously until golden.
  • Add the milk a little at a time. Put the saucepan back on the stove and slowly stir with a wooden spoon, until the sauce starts boiling and becomes thicker.
  • Turn heat off. Add salt to taste, and stir in the 1 oz. grated parmigiano cheese and pinch of nutmeg.
  • PASTA.
  • Begin cooking lasagna pasta in salted water as directed on package. Prepare al dente. To stop the cooking process, run cold water over drained pasta.
  • While pasta is cooking, begin.
  • PREHEAT oven to 350 degrees.
  • Grease heavily a large 13x9 baking dish.
  • Spread 2-3 Tbs. of tomato sauce over the bottom of the baking dish.
  • Place one layer of pasta over sauce in dish.
  • Spread with tomato sauce but not so thick you can't see pasta showing thru.
  • Spread with Balsamella white sauce. Try to pour as evenly as possible but don't blend. Not all tomato sauce should be covered.
  • Top with 2 ozs grated parmigiano reggiano cheese.
  • Repeat two times.
  • Top layer will be a beautiful marble of white sauce over the tomato sauce.
  • Bake for about 25 - 30 minutes. Doneness is when you fork the lasagna, it will pull out easily from the pasta.
  • Serve hot.

1/4 cup sun-dried tomato packed in oil, minced
1 tablespoon fresh garlic, minced

1/2 teaspoon salt

4 cups mozzarella cheese, shredded

Steps:

  • Melt butter with medium heat in heavy 1 quart saucepan.
