1/2 cup sugar
1-1/2 teaspoons cornstarch
1/4 teaspoon ground cinnamon
1 cup chopped dates
1/2 cup raisins
1/2 cup water
DOUGH:
1 cup butter, softened
2 cups sugar
3 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon salt

Steps:

  • In a small saucepan, combine the first six ingredients. Cook and stir over medium heat until thickened and bubbly. Cool. , In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Cover and refrigerate for 2-3 hours or until easy to handle. , On a lightly floured surface, roll half of the dough to 1/8-in. thickness. Cut with a 2-in. round cookie cutter. 1 cup (2 sticks) unsalted butter
1 cup granulated sugar
2 eggs, lightly beaten
1 teaspoon vanilla
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
Colored sugar and milk, for decorating, or Royal Icing, recipe follows
2 pounds confectioners' sugar
1/2 cup plus 2 tablespoons meringue powder (egg white powder)
Food coloring, as desired

Steps:

  • Cream the butter and sugar in a large bowl with an electric mixer. Beat in the eggs and vanilla.
  • Combine the flour, baking powder and salt in a second large bowl and mix well. Stir the flour mixture into the butter mixture 1 cup at a time. Chill the dough for 3 to 4 hours.
  • Preheat the oven to 350 degrees F. Line a cookie sheet with parchment. Roll out the dough and cut it into shapes with cookie cutters or a knife. Place the shapes on the prepared cookie sheet. If decorating with colored sugar, brush the cookies with milk and sprinkle with colored sugar (if using royal icing, leave unfinished). Bake until the cookies are just beginning to brown around the edges, 10 to 15 minutes, depending on the size of the cookies.
  • Remove the cookies to a rack to cool completely. If using royal icing, decorate the cookies as desired.

Be careful of adding too much color, which reduces the sheen of the frosting and can break down the consistency of the frosting over a couple of days. Store the icing at room temperature, covered, with plastic wrap on the surface.

2 teaspoons baking powder

⅔ cup butter, softened
¾ cup packed brown sugar
¾ cup white sugar

⅓ cup milk

1 ¾ cups raisins
1 cup packed brown sugar
1 cup water
1 pinch salt
1 teaspoon lemon juice
1 ½ tablespoons cornstarch

1 tablespoon lemon juice
1 tablespoon butter

1 egg, beaten

1/3 cup milk
2 teaspoons vanilla

Steps:

  • Filling:.
  • Cook raisins with sugar and water for 10 to 15 minutes, or until thick, stirring occasionally.

2 teaspoons baking soda
2 cups quick-cooking oatmeal
3/4 cup pecans, chopped (optional)

Steps:
