Categories     main-dish

Time 2h30m

Yield 6 to 8 servings

Number Of Ingredients 19

2 tablespoons extra-virgin olive oil, plus more for baking dish
1/2 cup finely chopped scallions (white and green parts)
1/4 cup grated carrots
1/4 cup finely chopped onion
1 teaspoon dried thyme
1 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup
2 teaspoons gelatin
2 pounds ground beef chuck
1/2 pound ground pork
2 large eggs, beaten
1/2 cup dried bread crumbs
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard

Steps:

  • To make the meatloaf: Preheat the oven to 375 degrees F. In a small skillet, heat the oil over medium heat. Add the scallions, carrot and onion and cook until softened, about 10 minutes. Add the thyme, cumin, paprika, and garlic and onion powders. Cook until fragrant, about 1 minute. Scrape into a large bowl and let cool completely.
  • Meanwhile, heat the ketchup in the microwave until just warm to the touch. Sprinkle the gelatin over the ketchup and whisk to remove clumps. Add to the cooled vegetable mixture, then add the beef, pork, eggs, and bread crumbs. Season with salt and pepper and mix just to combine. Coat a 9x13-inch baking dish with oil and form the meat mixture into a loaf.
  • To make the glaze: In a measuring cup, stir together the ketchup, Worcestershire, and mustard. Brush a little glaze on the meatloaf and bake until the internal temperature reaches 160 degrees F, about 1 hour 15 minutes, brushing three or four times with the glaze until you've used it all. Let meatloaf rest at least 15 minutes before slicing.

Yield Makes twelve 2 1/2-inch meatballs

Number Of Ingredients 7

1 pound ground round (15 percent fat)
1/2 pound sweet Italian sausage
1/3 cup plain dry bread crumbs
2 eggs, lightly beaten
2 large garlic cloves, minced
1/3 cup grated Pecorino Romano cheese
1 3/4 cups canned crushed tomatoes in heavy purée

Steps:

  • Remove ground round and sausage from refrigerator 30 to 60 minutes before cooking, if possible. Place bread crumbs in large bowl and stir in 1/3 cup water. When absorbed, blend together with eggs, garlic, 1/4 cup grated Romano, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  • Preheat oven to 425°F. Add meats to bread crumb mixture and combine well with fork. Form into 12 even balls. Lay in 1 layer in 8 x 14-inch baking dish so each is separated by about 1 inch.
  • Stir 1/4 cup water into crushed tomatoes and season with 1/8 teaspoon salt and pepper to taste. Pour tomatoes over and around meatballs. Sprinkle tops with remaining 1 1/3 tablespoons grated Romano. Bake in center of oven until meatballs are just cooked through, about 18 minutes. Serve hot.

Tips:

  • Use a variety of ground meats: This will give your meatballs a more complex flavor and texture. Good options include ground beef, pork, lamb, and veal.
  • Breadcrumbs are essential: They help to bind the meatballs together and keep them moist. You can use fresh or dried breadcrumbs, or even crushed crackers.
  • Don't overmix the meatball mixture: Overmixing can make the meatballs tough. Just mix until the ingredients are combined.
  • Season the meatball mixture generously: This is your chance to add flavor to the meatballs. Don't be afraid to use plenty of herbs, spices, and salt and pepper.
  • Brown the meatballs before simmering them: This will help to seal in the flavor and give the meatballs a nice crust.
  • Use a flavorful sauce: The sauce is what really brings the meatballs together. Choose a sauce that is flavorful and complements the meatballs.
  • Serve the meatballs hot: Meatballs are best served hot, right out of the oven or off the stovetop. You can also make them ahead of time and reheat them before serving.

Conclusion:

Old-fashioned meatloaf meatballs are a classic comfort food that is easy to make and loved by people of all ages. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will enjoy. So next time you're looking for a hearty and flavorful dish to serve, give these old-fashioned meatloaf meatballs a try. You won't be disappointed!
