4 tablespoons extra-virgin olive oil
5 tablespoons unsalted butter, divided
3 medium yellow onions, chopped (about 3½ cups)
3 large garlic cloves, minced
¼ cup all purpose flour
6 cups chicken broth
2 (28-ounce) cans whole peeled tomatoes
2 tablespoons sugar
½ teaspoon dried thyme
Salt
Freshly ground black pepper
Fresh chopped basil
Croutons
Freshly grated Parmigiano-Reggiano

Steps:

  • In a large nonreactive pot (see note), heat the olive oil and 2 tablespoons of the butter over medium-low heat. When the butter is melted, add the onions and cook over medium heat, stirring occasionally, until soft and translucent. Do not brown; reduce heat if necessary. Add the garlic and cook for a few minutes more, stirring to be sure garlic does not burn. Add the flour and continue cooking and stirring for 1 to 2 minutes more.
  • Add the chicken broth, tomatoes, sugar, thyme, 1¼ teaspoons salt and ½ teaspoon pepper. Bring to a simmer over medium-high heat while stirring to make sure that the flour is not sticking to the bottom or sides of the pan. Reduce the heat to low, cover the pan, and simmer for about 40 minutes.
  • Using a hand-held immersion blender, purée the soup until very smooth. (Alternatively, let the soup cool slightly and purée in batches in a blender. Be sure to crack the lid or remove the center cap to allow steam to escape.) Taste and adjust seasoning with salt and pepper. Stir in the remaining 3 tablespoons of butter. Ladle the soup into bowls and garnish with fresh basil, croutons, and Parmigiano-Reggiano, if desired. (Nutritional information below does not include optional garnishes.)
  • Note: A nonreactive pot is made of a material that will not negatively react with acids. Glass, stainless steel or enameled pots are all safe to use. Nonstick pots are also okay but be sure there are no scratches in the non-stick coating.
  • Freezer-Friendly Instructions: The soup can be frozen for up to 3 months. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot.

4 diced tomatoes
4 cups tomato juice
1 1/2 cups heavy cream
1/2 cup butter

Steps:

  • Place tomatoes and juice in a stockpot over medium heat.
  • Simmer for 30 minutes.
  • Puree the tomato mixture at this point if you don't want it chunky. I usually puree part but still leave a fair amount of chunks.
  • Place the pot over medium heat and stir in the heavy cream and butter. Season with salt and pepper.
  • Heat, stirring until butter is melted. Do NOT boil.

1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Steps:

  • To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.
  • Now dump in the diced tomatoes and stir to combine. Add the tomato juice.
  • Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)
  • Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.
  • Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.
  • Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.
  • Serve the soup warm!

4 chicken bouillon cubes
1 can (14-1/2 ounces) diced tomatoes
1/2 cup chopped celery

2 cups half-and-half cream
1/3 to 1/2 cup sherry, optional

  • In a large saucepan, bring first five ingredients to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. 2 (28 ounce) cans whole tomatoes, drained, reserve 3 cups juice (not packed in puree)
1 1/2 tablespoons dark brown sugar
4 tablespoons unsalted butter
4 large shallots, minced
1 tablespoon tomato paste
1 pinch ground allspice
2 tablespoons unbleached all-purpose flour
1 3/4 cups chicken stock or 1 3/4 cups canned low sodium chicken broth
1/2 cup heavy cream
2 tablespoons brandy or 2 tablespoons dry sherry
table salt
cayenne pepper

Steps:

  • Preheat oven to 450 degrees; adjusting oven rack to upper-middle position.
  • Line cookie sheet with foil.
  • Spread tomatoes in single layer on foil, and sprinkle evenly with brown sugar.
  • Bake until all liquid has evaporated and tomatoes begin to color, about 30 minutes.
  • Let tomatoes cool slightly, then peel them off foil; transfer to small bowl and set aside.

  • Remove from heat and using an immersible blender puree the tomatoes.
  • (If using a blender, strain mixture into medium bowl.Transfer tomatoes and solids in strainer to blender; add 1 cup strained liquid and puree until smooth. Return to pan and add remaining reserved liquid.).
  • Add cream, and heat over low heat until hot, about 3 minutes.
