OLD-FASHIONED CHOCOLATE FROSTING

Old-Fashioned Chocolate Frosting image

Use this to frost our Old-Fashioned Chocolate Cake.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes about 3 cups

Number Of Ingredients 7

1 1/2 cups confectioners' sugar
3 tablespoons unsweetened Dutch-process cocoa powder
Pinch of salt
5 tablespoons unsalted butter, softened
4 ounces cream cheese, room temperature
7 ounces bittersweet chocolate, melted
2/3 cup sour cream

Steps:

  • Sift sugar, cocoa powder, and salt into a medium bowl; set aside.
  • Put butter and cream cheese into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high until fluffy. Reduce speed to low. Gradually add sugar mixture. Mix in chocolate and sour cream. Use immediately.

Tips:

  • Choose high-quality chocolate for the best flavor. Semi-sweet or bittersweet chocolate works well.
  • Use unsalted butter to control the amount of salt in the frosting.
  • Bring the butter and chocolate to room temperature before mixing. This will help them blend together smoothly.
  • Mix the frosting on low speed until it is just combined. Overmixing can cause the frosting to become grainy.
  • If the frosting is too thick, add a little milk or cream to thin it out.
  • If the frosting is too thin, add a little more powdered sugar to thicken it.
  • Use the frosting immediately or store it in the refrigerator for up to 2 weeks.

Conclusion:

This old-fashioned chocolate filling and frosting is a classic for a reason. It's rich, decadent, and perfect for any chocolate lover. Whether you're using it to fill a cake, frost a cupcake, or spread on a piece of toast, this frosting is sure to be a hit. So next time you're looking for a delicious and easy chocolate frosting, give this recipe a try.
