Time 1h

Number Of Ingredients 8

1/2 lb bacon, cut into bite size pieces
1 13.5 ounce package smoked keilbasa, thinly sliced
1 medium onion, chopped
1 medium medium head cabbage, chopped
salt and pepper to taste
1/2 c chicken broth
1 12 ounce package broad egg noodles, cooked as directed
dried parsley flakes (for garnish)

Steps:

  • 1. In a 5-quart Dutch oven, over medium-high heat, cook the bacon and keilbasa, stirring often, until bacon is cooked and keilbasa is browned on the edges, about 10-15 minutes. Transfer to a plate and cover to keep warm. Set aside.

Time 25m

Yield 2 servings

Number Of Ingredients 9

Kosher salt and freshly ground black pepper
Olive oil
2 cups thinly sliced yellow or white onions (1/4-inch thick)
3 tablespoons unsalted butter
4 cups thinly sliced green cabbage (1/4-inch thick)
1 1/2 cups low-sodium chicken stock
8 ounces large egg noodles
1/4 cup roughly chopped or torn flat-leaf parsley
1/4 cup sour cream

Steps:

  • Bring a large pot of salted water to a boil.
  • Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
  • In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.

Tips:

  • Use a large pot or Dutch oven to cook the cabbage and noodles. This will give the ingredients plenty of room to cook evenly.
  • Don't overcook the cabbage. It should be tender but still have a little bit of crunch to it.
  • Cook the noodles according to the package directions. They should be cooked al dente, or slightly firm to the bite.
  • Use a variety of kielbasa. Smoked kielbasa, Polish kielbasa, or any other type of kielbasa that you like will work well in this dish.
  • Add other vegetables to the dish, such as carrots, celery, or onions. This will make the dish more colorful and nutritious.
  • Serve the cabbage and noodles with a dollop of sour cream or yogurt. This will add a creamy richness to the dish.

Conclusion:

Old Fashioned Cabbage and Noodles with Kielbasa is a hearty and flavorful dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste. Whether you like your cabbage and noodles with a lot of kielbasa or just a little, this dish is sure to please everyone at the table.
