DAD'S LIMA BEAN SOUP WITH HAM BONE

Dad's Lima Bean Soup with Ham Bone image

This was one of my father's favorite dishes, a staple of Depression-era cooking when fresh meat was scarce and soup stretched everything. Simmered until thick, with chunks of ham - even lima-bean-haters enjoy this hearty soup.

Yield 8

Number Of Ingredients 11

1 (16 ounce) package dried lima beans
1 ham bone with some meat
8 cups water, or more as needed
1 tablespoon olive oil
4 stalks celery, diced
1 onion, diced
½ pound diced cooked ham
4 carrots, peeled and sliced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried parsley

Steps:

  • Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.
  • Combine ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until remaining meat falls off the bone, about 2 hours. Remove and discard bone. Use a slotted spoon to transfer meat to a bowl.
  • Heat oil in a skillet over medium heat. Add celery and onion; cook and stir until onion is translucent, 7 to 10 minutes. Add cooked ham bone meat, lima beans, and diced ham. Reduce heat and simmer, adding additional water as needed, until soup is thickened to desired consistency, about 90 minutes.
  • Stir carrots, salt, pepper, and parsley into the soup. Let simmer until carrots are soft, about 30 minutes more.

OLD FASHIONED BUTTER BEANS

Ham and bean recipe using lima beans, slow-cooked with veggies and seasonings.

Categories     Main Course     Soup

Time 11h

Number Of Ingredients 16

1 lb bag of dried lima beans
1-2 Tbsp baking soda
1-2 Tbsp salt
8-10 quarts water (to submerge beans )
1 lb soaked and rinsed lima beans
1-2 Tbp cooking oil
1 lb chopped cooked ham
1 large onion diced
3 stalks celery diced
2-3 carrots diced
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp celery salt
1½ tsp salt
½ tsp black ground pepper
⅛ tsp hickory liquid smoke (optional)

Steps:

  • The night before you plan to prepare your beans, they will need to be soaked. Use a large bowl or pot, with about a gallon of water, add 1-2 Tbsp baking soda and 1-2 Tbsp salt. I have been advised by many cooks to use soda, and others have said to use salt. I found it best to use both, and the results have been less noisy if you know what mean.Once you have completed soaking the beans it is now time to clean and rinse them. Place the colander into the sink. Pour the beans into the colander and remove any broken or odd-looking beans and discard them. Be sure to rinse them very well.
  • Next, chop the ham and the onion.
  • Then prepare the celery and carrots. Place them into a bowl and set them aside.
  • Now, put the pot on the stove and turn on the heat to medium-low. Add the oil, onion, and ham. Saute until the onions begin to clarify.
  • Next, add in the carrots and celery. Then add the cleaned and rinsed beans.
  • Quickly add 4-6 quarts of water or until the beans are submerged. Then mix in the seasonings. Bring the pot to a boil for at least 15 minutes and stir to heat up the ingredients. Turn down to cook on medium to medium-low heat for at least 2-2½ hours. This will allow them to be tender to the touch and completely cooked. Be sure to check the pot at least every 15 to 20 minutes. When stirring your beans, use a large metal spoon. If you stir them from the bottom to the top, it will help to prevent them from sticking or burning throughout the cooking process.
  • Once the beans are tender, and slightly mushy and the soup is like a thick gravy like stew, they are done. Serve with fried potatoes, corn bread, or plain.
  • Enjoy!

OLD FASHIONED BROWN BUTTER BEANS

Old Fashioned Brown Butter Beans image

I have always loved brown butter beans. Years ago, when we lived in Michigan, the only time that I ever got them were on trips to North Carolina to see our family. I would stop at a mountain store in Fancy Gap, Virgina and stock up, buying as many as I could to take back home. Now that we live here, I can get them anytime that...

Time 6h10m

Number Of Ingredients 6

1 to 1 1/2 lb brown butter beans
1 to 2 slice country ham or about 1 cup diced ham
2 Tbsp bacon grease
1 Tbsp salt or to taste
1 tsp black pepper
1 pinch crushed red pepper flakes

Steps:

  • 1. Check beans and remove any bad beans, small rocks, or dirt. Once beans have been checked, place beans in a colander and wash thoroughly. Put beans in slow cooker and set aside.
  • 2. If using country ham slices, cut into small pieces. Put into slow cooker with beans. Add bacon grease and seasonings and cover with water. Turn slow cooker on high setting. Check periodically to make sure beans have enough water.
  • 3. After a couple of hours or when beans begin to become tender, reduce heat to low and continue to cook for about 3 to 4 more hours or until beans are tender. Serve hot with cornbread. You may also cut up some onions and sprinkle on top and add a little hot sauce, if desired.

Tips:

  • Choose Quality Ingredients: To ensure the best flavor and texture, use high-quality butter beans, ham, and other ingredients. Fresh, locally sourced ingredients are ideal.
  • Soak the Beans Overnight: Soaking the beans overnight helps reduce cooking time and improves their texture. If you're short on time, you can quick-soak the beans by boiling them for 2-3 minutes, then removing from heat and letting them sit for 1 hour.
  • Use a Good Ham: The type of ham you use will significantly impact the flavor of the dish. Choose a ham that you enjoy the taste of, such as a smoked ham or a country ham.
  • Season to Taste: Don't be afraid to adjust the seasonings in the recipe to your liking. Add more salt, pepper, or herbs if desired.
  • Serve with Cornbread or Rice: Butter beans and ham are traditionally served with cornbread or rice. These sides help soak up the delicious sauce and balance the flavors of the dish.

Conclusion:

This classic Southern dish is a hearty and flavorful meal that is perfect for a weeknight dinner or a special occasion. With its simple ingredients and easy preparation, butter beans and ham is a dish that everyone will enjoy. So next time you're looking for a comforting and delicious meal, give this recipe a try!
