3 slices bacon, chopped (about 4 ounces)
1/2 cup chopped picnic ham (about 2 ounces)
1/2 cup chopped onion
1 teaspoon granulated garlic
2 cups sliced fresh okra (about 6 ounces)
4 cups chicken stock
2 cups raw converted rice
1 teaspoon kosher salt
1/2 teaspoon ground black pepper

Steps:

  • Fry the bacon and ham in a heavy-bottomed pot over medium heat until brown and crisp, about 10 minutes. Stir in the onions and granulated garlic and sauté, stirring frequently, for 5 minutes, or until the onions are tender. Add the okra and sauté for 5 to 10 minutes. 8 slices bacon, diced
1 1/2 cups sliced fresh okra
1 large onion, chopped
1 green bell pepper, chopped
1 1/2 cups uncooked long-grain rice
salt (to taste)
1/2 teaspoon pepper (to taste)
2 cups chicken stock or 2 cups water

Steps:

  • Fry bacon in a large non-stick skillet until it is crisp; transfer bacon to a paper-towel lined plate to drain; discard all but 2 tablespoons bacon drippings from skillet.
  • Cook okra, onion, and bell pepper in hot bacon drippings over medium-high heat for 5 minutes or until tender, stir frequently.
