1 cup unbleached flour
1/2 cup brown sugar
1/2 cup butter, melted
1 egg
1 cup butter

1 (6 ounce) can sweetened condensed milk
1/4 cup corn syrup
6 ounces bittersweet chocolate, chopped
2/3 cup whipping cream

Steps:

  • CRUST;.
  • Line a 9 x 13 metal cake pan with parchment or wax paper leaving about a inch over hang on each side for handles, set aside.
  • Preheat oven to 350°F.
  • In a bowl combine the oatmeal, flour and sugar.
  • In a separate dish whisk the melted butter with the egg, then stir into oatmeal mixture until moistened.

  • Let the chocolate mixture cool to room temperature and then pour over the toffee layer.
  • Refrigerate until set ( about 1 hour).
  • ***(If you are making this ahead you can cover this now and leave in the fridge for a week or over wrap with foil and freeze for up to 2 weeks.).
  • Once set use the paper handles to remove the bar to a cutting board.
  • Peel the paper from the sides.
  • Wiping knife between cuts, trim the edges and cut into 1 inch squares.

1/2 cup butter, divided
3 semi-sweet chocolate baking squares

  • Crush 2 dozen cookies in the blender and add 1/4 cup melted butter.

•For the Oatmeal Cookie Base:
•1 1/2 cups old-fashioned rolled oats
•1 1/4 cups flour
•1/2 teaspoon baking soda
•1/2 teaspoon salt
•7 tablespoons butter, softened, wrapper reserved
•1/2 cup dark brown sugar
•1/2 cup sugar
•1 egg
•1 teaspoon vanilla extract
•For the Filling:
•1 tablespoon butter
•7 ounces sweetened condensed milk
•1 cup (6 ounces) semi-sweet chocolate chips
•1/2 teaspoon salt
•1 teaspoon vanilla extract
•1/2 cup mini marshmallows
•1/2 cup chopped walnuts (optional)
•Topping:
•1/2 cup mini marshmallows
•1/2 cup (3 ounces) semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. For cookie base: In a medium bowl, whisk together oats, flour, baking soda and salt and set aside. In a large bowl, cream together butter and sugars using an electric mixer until light and fluffy, about 2 to 3 minutes. Add egg and vanilla and mix until fully incorporated. Add dry ingredients, about 1/3 at a time, mixing for just a few seconds with each addition until the dry ingredients have been barely incorporated. Finish mixing by hand, stirring to make sure that dry ingredients have been fully incorporated. Grease an 8 x 8-inch pan using the butter wrapper. Press 2/3 of the cookie base into the greased pan then set aside. For the filling: Place butter, condensed milk and chocolate chips into a microwave-safe bowl. Microwave for 30 seconds and stir. Continue microwaving in 10 to 15 second increments until chocolate has just melted and mixture is smooth. Add salt, vanilla, marshmallows and nuts and stir to incorporate. Pour into baking dish and spread evenly over cookie base. Topping: Dot the top of the filling with remaining cookie batter. Filling will still be visible between clumps of batter. Sprinkle marshmallows and chocolate chips evenly over top and bake for 28-32 minutes, until marshmallows are nicely browned. Allow the bars to cool before cutting. Tip: You can use a 9-inch square pan, but will need to bake for 5 to 7 minutes less. If you double this recipe, bake it in a 15 x 10-inch pan for 5 to 7 minutes less. 1/2 cup butter, softened
1 tablespoon water
1 egg
1 pouch Betty Crocker™ oatmeal cookie mix
1/3 cup packed dark brown sugar
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon grated lemon peel
1 1/2 cups fresh cranberries, chopped
1/4 cup pomegranate-cranberry juice
2 tablespoons butter, melted, cooled

Steps:

  • Heat oven to 350°F. Grease 9-inch square pan with butter; line bottom of pan with parchment paper or foil.
  • In medium bowl, mix softened butter, water and egg until blended. Add cookie mix; mix well. Reserve 1 1/2 cups dough for topping. Using hands or wooden spoon, press remaining dough in bottom of pan (be sure it touches sides of pan).
  • In another medium bowl, beat brown sugar, flour, cinnamon and lemon peel with spoon until well combined. Add cranberries, cranberry-pomegranate juice and melted butter; stir gently until cranberries are coated.
  • Spread filling evenly over base. Crumble reserved cookie dough evenly over top of filling.
  • Bake 35 to 45 minutes or until top is golden brown and filling is bubbly. Cool completely, about 1 hour. Cut into squares or bars. If desired, serve squares topped with whipped cream.
