OATMEAL COFFEE CAKE

Yield 12

Number Of Ingredients 12

1/3 cup canola oil
1/2 cup egg substitute
1/4 cup sugar substitute
1/2 cup plus 1 tablespoon brown sugar, divided
1 teaspoon vanilla extract
3/4 cup quick-cooking oatmeal, prepared in water
3/4 cup white whole wheat flour
3/4 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray. In a large bowl, combine oil, egg substitute, sugar substitute, 1/2 cup brown sugar, the vanilla, and oatmeal; mix well. In a medium bowl, combine both flours, cinnamon, salt, and baking soda; mix well. Stir flour mixture into egg mixture until well combined. Pour into baking dish. In a small bowl, mix walnuts and remaining brown sugar; sprinkle over batter. Bake 30 to 35 minutes, or until toothpick inserted in center comes out dry. Let cool, then cut into squares.

Tips:

  • Use fresh ingredients. Fresh oatmeal, fruit, and spices will give your coffee cake the best flavor.
  • Don't overmix the batter. Overmixing can make the cake tough.
  • Bake the cake at the right temperature. A too-hot oven will burn the cake, while a too-cool oven will make it dense and gummy.
  • Let the cake cool completely before serving. This will help the flavors to develop and the cake to set.
  • Store the cake in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.

Conclusion:

Oatmeal coffee cake is a delicious and easy-to-make treat that is perfect for breakfast, brunch, or dessert. With its moist, flavorful crumb and sweet, cinnamony topping, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special treat, give this oatmeal coffee cake a try!
