10 tablespoons cold unsalted butter, cut into pieces
2/3 cup light brown sugar, packed

1 cup packed shredded or flaked sweetened coconut

Steps:

  • Place the oats in a medium bowl. Add the boiling water, mix, and let stand 20 minutes. Preheat the oven to 350 degrees F. Lightly butter a 9-inch cake pan, round or square. In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until smooth. Add both sugars and mix until smooth and fluffy. 1 1/2 c boiling water
1 c oatmeal (old fashioned or quick)
1/2 c (1 stick) butter
2 eggs, beaten
1 c brown sugar
1 c white sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
1 1/3 c all purpose flour
FROSTING:
1/2 c (1 stick) butter
1/2 c white sugar
1/4 c cream
1 to 2 c shredded coconut
1 c chopped walnuts (may use pecans if preferred)
1 tsp vanilla extract

  • 1. For The Cake: In a large bowl, pour boiling water over oatmeal and add the butter. Let stand until butter is melted.
