3 -4 boneless chicken breasts
1/2 cup teriyaki marinade , sauce
1 medium onion
1 tablespoon chopped garlic
1 tablespoon lemon juice
1 teaspoon pepper

Steps:

  • Cut chicken breasts into 3 to 4 inch pieces. Place in a zip-loc bag along with Teriyaki Sauce, diced onion, garlic, lemon juice and pepper. Marinate in the refrigerator for 2 hours. 2 Place Chicken on the 1 inch rack in the Nu-wave Oven and cook for 15 minutes. Pour Teriyaki Marinade into an aluminum pan, casserole dish, or any container that can be placed in the Nu-wave Oven. Remove chicken from the oven and place it on top of the marinade. In Japan, teriyaki is a mix of soy sauce, sake and the rice wine mirin, which imparts a subtle sweetness. The teriyaki found throughout Seattle, of which this is an adaptation, is a bit more showy. Cooks sweeten with white sugar and pineapple juice. They thicken with cornstarch. Ginger and garlic go into the mix because of the Korean ancestry of many cooks. It is not at all traditional, but it is simple to prepare and addictive to eat. Be sure to plan ahead as you do need to marinate the chicken before cooking. An overnight stay in the fridge is ideal, but many readers have been happy with a quick marinade of an hour or so.

1 cup soy sauce
1 cup granulated sugar
1 1/2 teaspoons brown sugar
6 cloves garlic, crushed in a press
2 tablespoons grated fresh ginger
1/4 teaspoon freshly ground black pepper
1 3-inch cinnamon stick
1 tablespoon pineapple juice
8 skinless, boneless chicken thighs
2 tablespoons cornstarch

Steps:

  • In a small saucepan, combine all ingredients except cornstarch and chicken. Bring to boil over high heat. Reduce heat to low and stir until sugar is dissolved, about 3 minutes. Remove from heat and let cool. Discard cinnamon stick and mix in 1/2 cup water.

1 tablespoon cornstarch
1 tablespoon cold water
½ cup white sugar
½ cup soy sauce
¼ cup cider vinegar
1 clove garlic, minced
½ teaspoon ground ginger
¼ teaspoon ground black pepper
12 skinless chicken thighs

Steps:

  • In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.

2 chicken thighs
2 chicken legs
1 tablespoon liquid smoke
8 whole mushrooms, cut into a mix of halves and quarters
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon rubbed sage
1/4 teaspoon paprika
1/4 teaspoon msg (optional)
1/8 teaspoon ground cayenne pepper

Steps:

  • 1. Put chicken pieces in a big sealable bowl. Sprinkle with Liquid Smoke. Seal and shake to ensure chicken is covered. Open and sprinkle the pieces with Sparkle. Close and shake. Open and sprinkle the pieces with Sparkle again to cover pieces well with seasoning. If there's time, put sealed container in refrigerator and let marinate overnight. If not, let marinate for 20-30 minutes.
  • 2. When ready to cook, put mushrooms in the base. Place chicken pieces on 3" rack with skin side down. If cooking two pieces, put in the middle of the rack directly under the heating element.
  • 3. Cook at 420 (Default Temp) for 10 minutes. After 10 minutes, turn chicken over and Sear(450) for 15 minutes. This will require you to set it to Sear at three 5 minute intervals. This is what crisps up the chicken quite nicely.
  • 4. As soon as the last Sear is done, remove the dome. This will ensure the skin stays crispy. While the chicken is cooking, the juices will drip down and get soaked up into the mushrooms.
