1 medium red bell pepper, seeded and diced (about 1 cup)

1/2 teaspoon freshly ground black pepper
1 clove garlic, minced (about 1 teaspoon)
1 teaspoon peeled and grated fresh ginger
1 large sweet potato, peeled and cubed (2 cups)
6 cups low-sodium chicken broth or vegetable broth
1 (14.5-ounce) can no salt added diced tomatoes, with their juices
2/3 cup creamy natural peanut butter
2 teaspoons honey
1/2 cup chopped scallion greens (about 3 scallions)

Steps:

2 medium leeks, white and light green parts thinly sliced
3 tablespoons tomato paste
3 tablespoons creamy peanut butter
1 tablespoon harissa
2 garlic cloves, minced

2 medium sweet potatoes or 2 medium yams, peeled and sliced 1/4 inch thick
3 1/2 cups low sodium vegetable broth
3 ounces baby spinach leaves, thinly sliced
lemon wedge, for garnish
