1 stick butter (1/2 cup)
1 cup milk
¾ cup flour
4 eggs
sugar, for sprinkling the puffs
honey, optional

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. Grease a regular size muffin pan with oil, on the inside and on the rim.
  • In a medium saucepan, melt the butter. Add the milk and bring to a low boil.
  • Add the flour all at once and stir vigorously with a wooden spoon, keeping the saucepan on low heat, until the dough comes together in a ball that stays together.
  • Cool for 5 minutes.
  • Add the eggs, one at a time, using a wooden spoon, until each egg is evenly mixed in. At first, the dough will separate into chunks, but then will become smooth.
  • Divide the dough evenly among the prepared muffin cups. Sprinkle each puff with sugar.

1 c water
1/3 c butter
1 c all purpose flour, sifted
1 pinch salt
2 Tbsp granulated sugar
4 large eggs
2 tsp vanilla extract
1 tsp lemon or orange zest
canola oil for frying
powdered sugar, for dusting after fried

Steps:

  • 1. Sift together flour, salt and sugar and set aside. Heat water and butter together until butter melts. Add flour mixture all at once to butter mixture, and stir rapidly with a wooden spoon until dough leaves sides of pan and forms a soft lump. Remove from heat. Cool 15 minutes.
  • 2. Add and beat in one egg at a time, beating hard after each addition. When dough is not longer shiny, stir in vanilla and lemon or orange zest.
  • 3. Scoop up a heaping teaspoon of the dough and, with a second teaspoon, push it off into hot oil(350^) or until a 1-inch cube of bread browns in 60 seconds.
  • 4. When puffed and olden brown, drain on paper towels. Sprinkle with powdered sugar and serve hot. You may split slightly and add a dab of custard or lemon curd inside if desired, and drizzle with caramel or chocolate.

  • 1. Preheat oven to 375°F. Generously grease 12 muffin cups, including the edges and around the top; set aside
  • 2. In a medium saucepan melt butter; add milk. Bring to boiling. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball that does not separate.Remove from heat; cool for 5 minutes. Very important to let cool!

1 cup (225 ml) water
Pinch of salt
3 1/2 tablespoons (45 g) unsalted butter
2 tablespoons plus 1 teaspoon confectioners' sugar
1 scant cup all-purpose flour (4 1/2 ounces/125 g)
Finely grated zest of 1 organic lemon
2 tablespoons cornstarch
4 eggs
Oil for deep-frying (corn, peanut or other oil with high smoke point)
Sugar and cinnamon for sprinkling

Steps:

  • 1. Put the water, salt and butter in a small saucepan and slowly bring to a boil until the butter is melted. Stir and remove from the heat. 2. Mix the confectioners' sugar, flour, lemon zest and cornstarch. Add it to the pan all at once. Stir to combine and return the pan to the heat. Using two dessertspoons, shape small balls of dough and drop them into the hot oil, not more than 4 at a time. Fry until golden, then turn once and fry from the other side. Remove with a slotted spoon and degrease on paper towels. Dip the spoons in hot water after each round (be careful of hot splashes!). 7. Sprinkle with a mix of sugar and cinnamon.
