SWEET NOODLE PUDDING/KUGEL (NUT TOPPING)
I like the way this sounds but haven't tried it yet. It's from Marcia Saltzman in Pingry Cooks. It has chopped nuts in the topping which is a bit different from the usual. If making for company, make sure there are no peanut allergies! You need to have this in the refrigerator all day or or night before baking so plan accordingly.

Steps:
- Mix all ingredients together to make a stiff dough.
- Knead well.
- Roll dough out very thin.
- Flour both sides of dough.
- Cut in half and form two rolls.
- Cut off narrow strips.
- Cook for a few minutes in a large pot of boiling water.
- Traditionally served with hot Cream Gravy made with 1/2 cup cream and 1-2 tablespoons melted butter and a pinch of salt.
Tips:
- Choose the right noodles: For this recipe, it's best to use a short, thick noodle like penne or rigatoni. These noodles will hold their shape well in the pudding.
- Cook the noodles al dente: You don't want the noodles to be too soft, or they'll become mushy in the pudding. Cook them according to the package directions, but test them a few minutes before the recommended cooking time is up to make sure they're still slightly firm.
- Don't overmix the pudding: When you're combining the ingredients for the pudding, be careful not to overmix it. Overmixing will make the pudding tough.
- Bake the pudding until it's set: The pudding is done baking when it's firm to the touch and a toothpick inserted into the center comes out clean.
- Serve the pudding warm or cold: This pudding can be served warm or cold. If you're serving it warm, let it cool for a few minutes before serving. If you're serving it cold, chill it for at least 2 hours before serving.
Conclusion:
Noodle pudding with farmer cheese and lingonberries is a delicious and unique dish that's perfect for any occasion. It's easy to make and can be served warm or cold. With its combination of sweet and savory flavors, this pudding is sure to be a hit with everyone who tries it.
