CREAMY SHRIMP CASSEROLE
My grandmother's special recipe and a family favorite in our house. Shrimp, egg noodles, peas and a few mushrooms layered in creamy sauce. Although this recipe yields quite a bit, my family of 4 usually devours the whole dish in one sitting.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 3-quart casserole dish.
- Fill a large pot with water, and bring to a boil over high heat. Stir in the shrimp, reduce heat to a simmer, and cook the shrimp until opaque and bright pink, about 3 minutes. Remove the shrimp to a bowl with a slotted spoon. Return the water to a full rolling boil over high heat, and stir in the noodles. Cook until the noodles are tender, about 8 minutes; drain in a colander set in the sink.
- Melt 2 tablespoons of butter in a saucepan over medium heat, and stir the flour into the butter to make a paste. Remove the pan from the heat; slowly whisk in the milk and cream until smooth. Season to taste with salt and black pepper. Return the sauce to the heat, lower heat to a simmer, and whisk constantly until the sauce thickens, about 5 minutes.
- Place noodles into the prepared casserole dish, and top with peas, mushrooms, and cooked shrimp. Pour the sauce over the casserole, and sprinkle the crushed cracker crumbs evenly over the top. Dot the top of the casserole with about 6 thin slices of butter.
- Bake in the preheated oven until the cracker topping is crisp and golden brown, about 1 hour.

Tips:
- Choose the right noodles: Wide noodles, such as egg noodles or fettuccine, work best in this casserole. They can hold the sauce and shrimp well.
- Cook the noodles al dente: This means cooking them until they are tender but still have a slight bite to them. Overcooked noodles will become mushy in the casserole.
- Use fresh shrimp: Fresh shrimp will give the casserole the best flavor. If you are using frozen shrimp, thaw them completely before cooking.
- Season the shrimp well: Before adding the shrimp to the casserole, season them with salt, pepper, and garlic powder. This will help to enhance their flavor.
- Use a creamy sauce: A creamy sauce will help to bind the casserole together and make it more flavorful. You can use a simple white sauce, or you can add cheese, vegetables, or herbs to create a more complex sauce.
- Top the casserole with cheese: A layer of cheese on top of the casserole will help to brown it and give it a crispy texture. You can use any type of cheese that you like, but cheddar cheese or mozzarella cheese are both good choices.
- Bake the casserole until it is bubbly and golden brown: This will usually take about 30 minutes. Keep an eye on the casserole while it is baking to make sure that it does not overcook.
Conclusion:
Noodle and shrimp casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. With a few simple ingredients, you can create a flavorful and satisfying casserole that the whole family will enjoy. So next time you are looking for a quick and easy recipe, give noodle and shrimp casserole a try. You won't be disappointed!
