DELLA NONNA SAUCE

Della Nonna Sauce image

Provided by Food Network Kitchen

Time 25m

Yield 2 servings

Number Of Ingredients 10

1 cup fresh peas
1 tablespoon unsalted butter
6 ounces prosciutto or pancetta, 1/4-inch dice
1 shallot, finely chopped
1 teaspoon chopped fresh thyme leaves
1/4 cup white wine
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper
1/2 cup finely grated Parmigiano-Reggiano, plus more for garnish
2 tablespoons torn fresh parsley leaves, plus more for garnish

Steps:

  • 1. Bring a large pot of salted water to a boil. Add peas and cook until bright green and tender, about 7 to 8 minutes. Remove the peas with a slotted spoon or strainer and set aside. Use the same water to cook pasta according to package directions. Drain, reserving 1/4 cup of the pasta water.
  • 2. Meanwhile, in a large skillet heat butter over medium heat. Add the prosciutto or pancetta and cook until golden and crispy, about 5 to 6 minutes. Add the shallot and thyme and cook until slightly softened, but not brown, about 1 minute. Increase the heat to medium-high and add the wine. Let the wine evaporate slightly and then add the heavy cream. Cook until the sauce reduces and thickens slightly, stirring occasionally, about 6 to 7 minutes. Season with salt and pepper. Just before serving, stir the cheese, parsley, and peas into the sauce until it thickens a little more.
  • 3. Toss the pasta in the sauce and use the reserved pasta water, if needed, to loosen the sauce slightly. Transfer the pasta to serving bowls and garnish with additional cheese and parsley, if desired.

Tips:

  • Use fresh, ripe tomatoes for the best flavor. If fresh tomatoes aren't available, you can use canned whole tomatoes, but be sure to drain them well and crush them by hand before adding them to the sauce.
  • Don't overcrowd the pan when browning the onion and garlic. If the pan is too crowded, the vegetables will steam instead of brown.
  • Simmer the sauce for at least 30 minutes, or longer if you have time. This will allow the flavors to meld and develop.
  • Season the sauce to taste with salt, pepper, and dried oregano. You can also add a pinch of red pepper flakes for a little heat.
  • Serve the sauce over your favorite pasta, or use it as a dipping sauce for bread or vegetables.

Conclusion:

Nonna's pasta sauce is a simple but delicious sauce that is perfect for a quick and easy weeknight meal. With just a few fresh ingredients and a little bit of time, you can create a sauce that is sure to please everyone at the table. So next time you're looking for a delicious and easy pasta sauce, give Nonna's recipe a try.
