THE BEST PEACH COBBLER

The Best Peach Cobbler image

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 12

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

Time 1h15m

Number Of Ingredients 11

1 stick (8 tablespoons) unsalted butter
2 ready-made pie crusts
1 cup all-purpose flour (plus some extra for dusting the work surface)
3 tablespoons agave syrup
1 1/4 teaspoons cinnamon (plus more for sprinkling on top)
3/4 teaspoon nutmeg
Four 29-ounce cans sliced peaches (drained)
Kosher salt
1 orange
2 eggs (whisked)
vanilla ice cream (for serving)

Steps:

  • Preheat oven to 375 degrees F. Grease a 13x9-inch baking pan with 1/2 stick (4 tbs) of the butter. Set aside.
  • On a lightly floured surface, roll out the pie crusts until they are large enough to cover the baking pan surface.
  • In a large skillet, melt the remaining 1/2 stick (4 tbs) butter over medium heat. Mix in agave syrup, cinnamon, nutmeg, and peaches. Add in 2 pinches of salt and mix well. Once the mixture begins to simmer, reduce the heat to low and continue cooking for 10 minutes. Remove mixture from heat and set aside to cool.
  • Pour half of the peach mixture into the prepared baking pan in an even layer. Grate half of the orange zest on top of the peaches. Place the first sheet of pie crust on top. Bake for 15 minutes or until light brown.
  • Take the cobbler out of the oven. Pour the remaining half of the peach mixture on top and grate the remaining orange zest on top of the peaches. Place the second pie crust on top, brush with a thin layer of egg wash and sprinkle cinnamon.
  • With a fork, poke holes on the top layer. This will help it cook evenly and allow steam to escape. Bake for 40 minutes or until the peach juices start to bubble and the top crust is golden brown.
  • Serve with a scoop of vanilla ice cream on top.

Tips:

  • Use fresh peaches: Fresh peaches have the best flavor and texture for cobbler. If you can't find fresh peaches, you can use frozen or canned peaches, but the flavor will not be as good.
  • Peel the peaches: Peeling the peaches is not necessary, but it will give the cobbler a more polished look. To peel a peach, use a sharp knife to make a shallow cut around the peach, then twist the two halves apart. Use a spoon to scoop out the pit.
  • Slice the peaches: Slice the peaches into thin wedges. This will help them cook evenly.
  • Use a combination of spices: The spices in this recipe (cinnamon, nutmeg, and ginger) complement the peaches perfectly. You can also add a pinch of cardamom or allspice, if you like.
  • Don't overcook the cobbler: The cobbler is done when the peaches are tender and the topping is golden brown. Overcooking the cobbler will make the peaches mushy and the topping dry.

Conclusion:

Peach cobbler is a classic summer dessert that is easy to make and always a crowd-pleaser. This recipe uses fresh peaches, a combination of spices, and a simple biscuit topping. The result is a cobbler that is bursting with flavor and has a perfect balance of sweet and tart. Serve it warm with a scoop of vanilla ice cream or whipped cream for a truly special dessert.
