1/4 cup unsweetened cocoa powder
2 tablespoons semisweet chocolate chips, plus more for topping

Steps:

  • Whisk the agave nectar, cornstarch and salt in a heavy-bottomed pot. Whisk in the evaporated milk and egg whites until well combined. Cook over medium-low heat, whisking constantly, until the mixture bubbles and thickens, about 10 minutes. Remove from the heat; stir in 1 tablespoon vanilla.
  • Transfer 1 cup of the mixture to a medium bowl. Add the white chocolate chips and the remaining 1 teaspoon vanilla and stir until the chips melt. Add the cocoa powder and semisweet chocolate chips to the remaining pudding and stir until the chips melt.

1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
1 cup confectioners' sugar
3-1/2 cups cold 2% milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 carton (12 ounces) frozen whipped topping, thawed
1 package (15-1/2 ounces) Oreo cookies, crushed
Shaved white chocolate, optional

Steps:

  • In a large bowl, beat the cream cheese, butter and confectioners' sugar until smooth. In a large bowl, whisk milk and pudding mixes for 2 minutes; let stand for 2 minutes or until soft-set. Gradually stir into cream cheese mixture. Fold in whipped topping. , Spread 1-1/3 cups crushed cookies into an ungreased 13x9-in. dish. Found this in the local newspaper just in time to make my Dad his chocolate cream pie for Thanksgiving which he loves. My Dad being a heart patient, I'm looking for ways to lower the fat in everything nowadays.

1/3 cup cocoa
1/3 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 1/4 cups nonfat milk
1 teaspoon vanilla

Steps:

  • Combine cocoa, sugar, cornstarch and salt in a large pot.
  • Over medium-high heat, gradually blend in milk and vanilla.
  • Bring to a boil, stirring constantly.
  • Boil and stir until thickened and cornstarch is cooked.
  • Pour into individual cups, or a pre-cooked pie shell, and chill in refrigerator until set.
  • Note: times might not be correct. I used 20 minute to combine ingred. and stir the pot. Used 35 minute for refrigerator time to set the pudding. Since I haven't made this yet, I don't really know the times.
