Steps:
- Place a rack in the center of your oven and preheat the oven to 350 degrees F. Coat a deep 9-inch pie dish with nonstick spray.
- Prepare any mix-ins (see recipe notes for a broccoli bacon version and the blog post above for more suggestions).
- In a large mixing bowl, whisk together the eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
- Scatter the mix-ins evenly across the bottom of the prepared pie dish.
- Sprinkle the cheese on top.
- Carefully pour the egg mixture into the dish. Place the dish on a rimmed baking sheet. Sprinkle the chives over the top.
- Bake the quiche on the baking sheet until the center is set, about 35 minutes. It should look puffed and golden at the edges, and when a thin, sharp knife is inserted in the center, the center should be cooked through without visible liquid. Let cool a few minutes. Cut into big wedges. Enjoy warm.

NO CRUST QUICHE
I think my mom got this recipe off the back of a Bisquick box. We loved it so much she made it weekly partly because it is so easy to make. Still a big hit today, everyone I've ever made it for loves it.

CRUSTLESS HAM AND CHEESE QUICHE
This is a quiche that is so easy and quick. I make it everytime I have company overnight or for lunch. You can substitute most any meat, ie chicken breast or pastrami or sausage. Also you can use spinach instead of broccoli. I have also added chopped tomatoes, but you need to cook a little longer if you do. I like to serve with crusty bread and a salad. My company always love this and ask for the recipe. Enjoy!

Tips:
- Use fresh ingredients: Fresh ingredients will give your quiche the best flavor. If possible, use organic eggs, cheese, and vegetables.
- Don't overcook the eggs: The eggs should be cooked through, but still slightly soft in the center. Overcooked eggs will be tough and rubbery.
- Use a non-stick skillet: This will help prevent the quiche from sticking to the pan and make it easier to flip.
- Let the quiche cool slightly before serving: This will help it set and make it easier to slice.
- Serve the quiche with a side salad or soup: This will make a complete and satisfying meal.
Conclusion:
No-crust cheese quiche is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is also a great way to use up leftover vegetables. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying quiche that the whole family will love.
