Number Of Ingredients 8

1/2 cup dried apricot
1/4 cup dried figs or 1/4 cup dates
1/2 cup chopped pecans
1/4 cup golden raisin
1/4 cup flaked coconut
3 tablespoons orange liqueur or 3 tablespoons orange juice
1/4 teaspoon almond extract
1/4 cup granulated sugar

Steps:

  • In a food processor or by hand, finely chop apricots, pecans, figs or dates, raisins and coconut.
  • Add liqueur or orange juice and almond flavoring.
  • Stir until well blended.
  • Roll into 36 balls, about 1-inch, by placing a small amount of the mixture between the palms of your hands.
  • Roll each ball in granulated sugar.
  • Layer in an airtight container, placing waxed paper or plastic wrap between each layer to prevent sticking.
  • Store in the refrigerator until ready to serve.
  • Serve on a glass plate lined with a paper doily.

1 package (15 ounces) raisins
2 cups pitted dried plums (prunes)
1 package (8 ounces) dried mixed fruit
1-1/2 cups chopped pecans

Steps:

  • In a food processor, combine the raisins, plums, mixed fruit and pecans. Cover and process until chopped. Transfer to a large bowl., Roll into 1-in. balls, then roll in sugar. Place on waxed paper and let stand at room temperature for 4 hours. Store in an airtight container. Roll in additional sugar before serving if desired.

2 eggs
1-1/4 cups sugar, divided
1 cup chopped almonds
1 cup sweetened shredded coconut
1 cup chopped dates
1 teaspoon vanilla extract
1/4 teaspoon almond extract

Steps:

  • In a large bowl, beat eggs for 1 minute. Gradually add 1 cup sugar; beat 1 minute longer or until thickened. Stir in the almonds, coconut, dates and extracts. Transfer to an ungreased 11x7-in. baking dish., Bake at 350° for 20-25 minutes or until browned and a thermometer reads 160°. Remove from the oven; stir. Let stand for 6-8 minutes or until cool enough to handle. Roll into 1-in. balls; roll in remaining sugar. Cool completely on waxed paper. Store in an airtight container.

1 cup graham cracker crumbs
1 1/2 cups fine coconut
1 (6 ounce) package red Jell-O, any flavour
1 (3 ounce) package red Jell-O, same flavour
1 (14 ounce) sweetened condensed milk

  • Mix graham crumbs, coconut, large package of jello (dry mix) and milk together really well.
  • Shape into 1 inch balls.
  • Roll in remaining package of jello (dry mix).
  • Reshape if necessary (You can shape them like strawberries if you want).
