Time 20m

Yield 1 pie

Number Of Ingredients 7

1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 (8 ounce) can crushed pineapple, slightly drained
1 cup flaked coconut
1 cup chopped pecans
1 (8 ounce) container of cool whipped topping, thawed (OR 2 cups whipping cream, whipped, and sweetened with 3-4 tbsp sugar)
1 graham cracker pie crust or 1 chocolate cookie pie crust

Steps:

  • In a med-large bowl, cream together the softened cream cheese and sugar with an electric mixer on high speed for 3-4 minutes.
  • Stir in the slightly drained crushed pineapple, coconut and pecans; mix well.
  • Carefully fold in half of the whipped topping, until filling is blended well.
  • Reserve the remaining half for top.
  • Spoon the filling into prepared crust.
  • Chill for several hours before serving.
  • NOTE: A alternative, is to fold in the full amount (2 cups) of whipped topping into the filling; this works quite well, and produces an even lighter texture of pie, but, allow more chilling time before serving for this method.
  • ALSO: this pie has a better texture, and holds up better and longer if prepared with Cool Whip topping.

Tips:

  • For a smoother pie filling, use fresh pineapple that has been finely chopped. If using canned pineapple, be sure to drain it well and pat it dry before adding it to the filling.
  • If you don't have a springform pan, you can use a regular 9-inch pie plate. Just be sure to trim the excess crust around the edges before baking.
  • To make sure the pie crust is cooked through, bake it for the full 15 minutes. If the crust is still soft after 15 minutes, bake it for a few minutes longer.
  • Let the pie cool completely before serving. This will allow the filling to set and the flavors to meld together.
  • Serve the pie with whipped cream, ice cream, or fresh fruit.

Conclusion:

This no-bake pineapple pie is a delicious and easy dessert that is perfect for any occasion. The creamy filling is made with fresh pineapple, cream cheese, and whipped cream, and the graham cracker crust is simple to make. The pie is best served chilled, and it can be stored in the refrigerator for up to 3 days.
