1 cup butter
½ cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 cup semisweet chocolate chips
½ cup peanut butter

Steps:

  • Grease a 9-inch square baking dish with cooking spray.
  • Melt butter in a saucepan over medium heat. Stir in brown sugar and vanilla extract. Add oats and cook over low heat until combined, 2 to 3 minutes. Spread 1/2 of the oat mixture into the prepared pan.

Number Of Ingredients 6

1 c chunky or creamy peanut butter
2/3 c honey (your local honey is the best)
1/2 c coconut oil (no substitutes, this is what makes it creamy)
2 c oats, oldfashion, do not use instant
1 1/4 c chocolate chips
3/4 c rice crispy cereal (can substitute dried cranberries, fruit or raisins)

Steps:

  • 1. Combine peanut butter, honey, coconut oil into a medium sauce pan and stir together over medium heat until melted.
  • 2. Add dry ingredients to large bowl: oats, chocolate chips and rice crispy cereal. Mix together
  • 3. Pour melted peanut butter mixture over the dry ingredients in the bowl. Mix well and pour the combined ingredients into a 9 x 13 baking dish. This is fairly thick, so you could use a larger dish. I would suggest lining your baking dish with parchment paper as I had to let set out on the counter to soften a bit before I could cut and remove from baking dish. Keep refrigerated. I covered my cut cookie bars with saran wrap to keep them fresher.

Tips:

  • Use a good quality chocolate for the best flavor.
  • Make sure the oats are finely ground for a smooth texture.
  • Don't overmix the batter, as this can make the bars tough.
