2 tablespoons extra virgin olive oil (plus some for oiling)
1/2 teaspoon crushed red pepper flakes
1 teaspoon dried oregano
1/2 teaspoon table salt (or just under 1 teaspoon of Kosher Salt)
2 teaspoons red wine vinegar
12 ounces New York strip steaks (1 Steak)
8 ounces cherries (halved) or 8 ounces grape tomatoes (halved)
3 sprigs fresh oregano (to serve) (optional)

Steps:

  • Heat a grill pan, or cast-iron or heavy non-stick frying pan.
  • In a small dish that can take the steak snugly later, combine the extra-virgin olive oil, red pepper flakes, dried oregano, salt, and red wine vinegar. 1 steak, cut along the whole length of the rump, about 1 1/2 pounds and 1 1/4 inches thick
1 small onion, quartered
1/3 cup plus 1 tablespoon olive oil
1 tablespoon good red wine vinegar
1 tablespoon Worcestershire sauce
Coarse salt (recommended: Maldon)
Approximately 8 cups arugula
2 lemons, quartered
Rosemary and Garlic Potatoes, recipe follows
