Categories     Side Dish     Vegetables

Time 30m

Number Of Ingredients 7

2 potatoes (2 medium-size potatoes, peeled and sliced into ¼-inch thick)
2 teaspoon salt (2 teaspoons salt)
4 tablespoons olive oil (4 tablespoons olive oil)
2 shallots (2 shallots peeled and very thinly sliced)
2 tablespoons champagne vinegar
¼ cup basil (¼ cup loosely packed fresh basil leaves, shredded)
salt and pepper (salt and pepper)

Steps:

  • Place the potatoes sliced in a large saucepan and cover with cold water. Add the 2 teaspoons salt and bring to a boil. Lower the heat and gently boil for 10 minutes or until the center of the potato's slices are just tender. Be careful not to overcook them. Once ready, drain them and run cold water over them to stop the cooking process. (At this point the potatoes can be refrigerated for 2 days)
  • In a heavy 12-inch skillet heat the oil. Add the shallots and toss over medium heat until the thin slices become translucent, 1 to 2 minutes. Do not brown.
  • Add the potatoes and 1 tablespoon vinegar and gently toss over high heat for 3 to 5 minutes. Add the basil, salt, black pepper, and more vinegar to taste. Serve immediately.

POTATO BASIL PUREE

Potato Basil Puree image

Provided by Ina Garten

Categories     side-dish

Time 40m

Yield 4 to 5 servings

Number Of Ingredients 6

2 cups fresh basil leaves, lightly packed
2 pounds large Yukon Gold or white boiling potatoes
1 cup half-and-half
3/4 cup freshly grated Parmesan cheese, plus extra for serving
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a rolling boil and fill a bowl with ice water. Add the basil leaves to the boiling water and cook for exactly 15 seconds. Remove the basil with a slotted spoon and immediately plunge the leaves into the ice water to set the bright green color. Drain and set aside.
  • Peel the potatoes and cut them in quarters. Add the potatoes to the same pot of boiling water and return to a boil. Cook the potatoes for 20 to 25 minutes, until very tender. Drain well, return to the saucepan, and steam over low heat until any remaining water evaporates.
  • In a small saucepan over medium heat, heat the half-and-half and Parmesan cheese until the cream simmers. Place the basil in a food processor fitted with the steel blade and puree. Add the hot cream mixture and process until smooth.
  • With a handheld mixer with the beater attachment, beat the hot potatoes in the pot until they are broken up. Slowly add the hot basil cream, the salt, and pepper and beat until smooth. If the potatoes need to be reheated, cover and cook gently over low heat for a few minutes. Pour into a serving bowl, sprinkle with extra Parmesan cheese, season to taste, and serve hot.

ROASTED POTATOES WITH TOMATOES, BASIL, AND GARLIC

Roasted Potatoes with Tomatoes, Basil, and Garlic image

Simple and light. The roasted tomato gives a light and tangy flavor which balances with the starchiness of the potatoes. Use a red or yellow potato for best flavor. Garlic, fresh basil, and a hint of rosemary add to the aroma. My girlfriend loves this as a side with chicken or pork.

Tips:

  • Select the Right Potatoes: Choose small, waxy new potatoes, as they hold their shape well during cooking and have a tender texture.
  • Scrub Thoroughly: Scrub the potatoes well under running water to remove any dirt or debris.
  • Parboil the Potatoes: Parboiling helps to ensure that the potatoes cook evenly. Bring a large pot of salted water to a boil, add the potatoes, and cook for 5-7 minutes, or until tender when pierced with a fork.
  • Drain and Cool: Drain the potatoes in a colander and let them cool slightly.
  • Use Fresh Herbs: Fresh basil adds a delicious flavor to the dish. If you don't have fresh basil, you can use dried basil, but reduce the amount to 1 teaspoon.
  • Don't Overcook: Be careful not to overcook the potatoes, as they can become mushy.

Conclusion:

This simple and flavorful recipe for New Potatoes with Basil is a perfect side dish for any summer meal. The potatoes are tender and slightly crispy, with a delicious herb butter coating. The fresh basil adds a pop of color and flavor that makes this dish irresistible. Whether you're serving it at a potluck, barbecue, or just a casual weeknight dinner, these potatoes are sure to be a hit. So next time you're looking for a quick and easy side dish, give this recipe a try. You won't be disappointed!
