This is a very requested recipe that I have used since the 70s. This dough can be made ahead and kept up to 1 week in the fridge, but it doesn't last that long around here.

Number Of Ingredients 8

1 pkg active dry yeast
1/3 c sugar
1/3 c shortening
1 tsp salt
1 egg well beaten
2 1/4 c sifted flour
butter, melted
1 c water, warm

Steps:

  • 1. Combime yeast, sugar, salt, shortening in large bowl add warm water mix well
  • 2. Add egg, flour, slowly beat 25 strokes. cover let let rise in warm place for 2hrs
  • 3. Punch down, turn onto a well floured surface. knead gently 1 min. to rolled out 1/3 inch thickness. Cut into desired shape.brush with butter. Let rise for 2 hrs.
  • 4. Bake 375 degree for 15 min. Then bake 425 degree for 10 min. until done

Tips:

  • For a softer crumb, use bread flour instead of all-purpose flour.
  • Make sure the water is warm, but not hot, to the touch. If the water is too hot, it will kill the yeast and prevent the rolls from rising.
  • Knead the dough for at least 5 minutes, or until it is smooth and elastic. This will help develop the gluten in the flour, which will make the rolls chewy.
  • Let the dough rise in a warm place for at least 1 hour, or until it has doubled in size. This will give the yeast time to ferment and produce carbon dioxide, which will make the rolls light and airy.
  • Bake the rolls in a preheated oven until they are golden brown. This will give them a crispy crust and a fluffy interior.
