Time 1h30m

Yield 8 bags, 8 serving(s)

Number Of Ingredients 18

2 tablespoons canola oil
8 ounces ground beef (80/20 lean-to-fat ratio)
8 ounces mexican chorizo sausage, removed from casing and crumbled
kosher salt & fresh ground pepper
2 poblano chiles, cut into 1/2-inch dice
1 large yellow onion, cut into 1/2-inch dice (about 2 cups)
1 1/2 tablespoons chili powder
1 1/2 teaspoons ground cumin
4 garlic cloves, minced
1 cup tomato puree
1 cup beef stock
1 tablespoon Worcestershire sauce
1/3 cup sliced pickled jalapenos with 1/4 cup pickling brine
1 (15 ounce) can red kidney beans, drained and rinsed
6 individual bags corn chips, such as Fritos
5 ounces sharp cheddar cheese, grated
1/2 cup sour cream
1/4 cup thinly sliced scallion, white and green parts

Steps:

  • Heat the oil in a large straight-sided skillet over medium-high heat. Add the ground beef and chorizo and break up the meat using the back of a wooden spoon or spatula. Sprinkle liberally with salt and black pepper and cook, stirring occasionally, until browned but not fully cooked through, 4 to 6 minutes. Transfer the meat to a plate using a slotted spoon. Do not discard the fat from the skillet.
  • Add the chiles and onions to the skillet with the fat and cook until lightly browned and softened, stirring occasionally, 6 to 8 minutes. Stir in the chili powder, cumin, garlic and 1/4 cup water and cook for 2 minutes, stirring constantly. Add the tomato puree, beef stock, Worcestershire sauce and reserved browned beef and chorizo. Stir to combine and bring to a boil, and then lower to a simmer and cook covered for 25 minutes.
  • Stir in the pickling liquid and beans and cook for another 15 minutes, uncovered, until the chili has reduced slightly and is nice and thick. Season with salt and black pepper.
  • To assemble, turn each bag of corn chips horizontally and cut a slit to open the bag. Spoon enough warm chili into each bag to cover the chips, about 1/2 cup, and top with a handful of the Cheddar and a dollop of the sour cream. Garnish with the pickled jalapenos and scallions.

Tips:

  • Use fresh and high-quality ingredients: This will make a big difference in the overall flavor of your nachos.
  • Choose the right chips: Use sturdy chips that can stand up to the toppings without getting soggy. Tortilla chips or potato chips are both good options.
  • Don't overload the bag: You want to be able to shake the bag and have the toppings evenly distributed. If you overload the bag, the nachos will be difficult to mix and the toppings will fall off.
  • Be generous with the cheese: Cheese is one of the key ingredients in nachos, so don't be afraid to use a lot of it. A good rule of thumb is to use about 1 cup of cheese per person.
  • Add your favorite toppings: Once you have the basic ingredients, you can add any toppings you like. Some popular options include ground beef, chicken, beans, salsa, sour cream, and guacamole.
  • Shake the bag well: Once you've added all of your ingredients, shake the bag vigorously for a few minutes. This will help to distribute the toppings evenly and coat the chips in cheese.
  • Serve immediately: Nachos are best served immediately after they're made. This will prevent the chips from getting soggy.

Conclusion:

Nachos in a bag are a fun and easy snack or meal that can be enjoyed by people of all ages. They're perfect for parties, potlucks, or game day gatherings. With a little creativity, you can create endless variations of nachos in a bag, so you're sure to find a combination that everyone will love.
