Mom's Swiss Steak is the perfect family dinner! With tender braised beef in a hearty pepper, onion, mushroom and tomato sauce.

2 1/2 to 3 pounds chuck steak, 1 inch thick
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper
14.5 ounces petite diced tomatoes (1 can)
1 large onion, cut into strips
3 medium green and red bell peppers, cut into strips
8 ounces mushrooms, cleaned and sliced thin
3 garlic cloves, minced
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon salt and pepper
3 tablespoons Worcestershire Sauce (Lea & Perrins Original for gluten-free)
Optional: 1 tablespoon cornstarch and 2 tablespoons water to thicken sauce if desired

Steps:

  • Preheat oven to 350 degrees and place the rack in the middle position of the oven.
  • Cut the beef into serving-sized pieces. If some pieces are thicker than others, pound them with a meat tenderizer so they all are 1 inch thick.
  • Season both sides of the meat with garlic powder, onion powder, salt and pepper, and place in a 9x13 baking dish.
  • Add the tomatoes, onion, bell pepper, mushrooms, garlic, 1 teaspoon salt and pepper, 2 teaspoons onion powder and garlic powder, and three tablespoons Worcestershire sauce to a large mixing bowl. Fold it all together and pour over the steak in the 9x13 baking dish.
  • Cover the dish and cook on 350 degrees for 1½ - 2½ hours covered. (The total cook time depends on the thickness of your meat and the cut of meat you use. It could require more time in the oven if it's not as tender as desired.)
  • When the meat is tender, remove from the oven and allow to sit for 5 -10 minutes uncovered.
  • If you'd prefer a thicker sauce, pour the liquid from the pan into a sauce pan over medium high heat. In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoon water. Bring the sauce to a boil and stir in the cornstarch slurry for 1-3 minutes until it's thickened.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

My mom makes the greatest swiss steak ever. Its easy but kind of involved in the am. We serve it with mashed potatoes or egg noodles! You will love it-the meat is so tender it literally falls apart under your fork!

3-4 lb 1 inch thick or less round steak
1 medium onion
2 celery stalk
1 14 ounce can crushed tomatoes
2 1/2 c beef stock
5 Tbsp flour, plus 1 cup to dredge meat in
3 Tbsp canola oil
salt and pepper to taste
1 green pepper (optional)

Steps:

  • 1. 8 am. dice up the onion and celery, place in crock pot. Pour in can of tomatoes, including juice.
  • 2. whisk together beef broth and 5 tbs of flour. add to mixture in crock pot. add salt and pepper to taste, stir.
  • 3. trim any fat off steak and cut into app 3 ounce serving size pieces. salt and pepper, then dredge in flour and flash brown steaks in canola oil. They do not have to be cooked all the way done, we are just browning the outsides!
  • 4. add steak to crock pot, sinking the meat below the surface of the sauce. Put lid on pot, set to low and cook until 5 pm or so!! enjoy!

1 lg. round steak
2 onions
2 green peppers
1 - 8 oz. can tomato sauce
1 c. water
1 dash Worcestershire sauce
salt and pepper

Steps:

  • Chop onion and green pepper and saute in greased pan. Then spoon out in a bowl and set aside. Cut round steak into 4 pieces. Pound flour into both sides and pound really well, it makes it tender too, you'll be able to cut it with a fork! Brown meat on both sides. Put chopped onion and green pepper mixture on top on each piece of meat and cover well, if you have to chop a little more do it, it will add to flavor. Then take tomato sauce and add the water, stir and pour over meat. Simmer on low heat for a couple hours or until meat is tender enough to cut with fork. If done in an electric frying pan, cook on about 250-300 degrees. Check frequently, mixture will start to thicken, try to keep it from sticking too much; add more water when necessary. Make this a gravy consistency, not too watery. Make mashed potatoes, add a vegetable and there's your dinner!

This is an old recipe from my mom. She called it stroganoff. It's a pretty healthy recipe considering it uses tomato juice and doesn't use sour cream (instead, it uses evaporated milk and lemon juice). Round steak is relatively low in fat also (compared to some cuts).

1 lb beef round steak, 1/2 inch thick
2 tablespoons oil
1/4 cup onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
1 1/2 cups tomato juice
4 ounces canned mushroom pieces, drained
1/2 cup evaporated milk
1 tablespoon lemon juice
cooked noodles

Steps:

  • Cut round steak into 3 x 1 inch strips.
  • Heat oil. Brown strips in it. Add onion, salt and pepper. (Note you can probably omit the salt if your tomato juice has salt in it.) Cook long enough to soften onion.
  • Blend in flour, then tomato juice and mushrooms.
  • Cover and cook over low heat one hour or until meat is tender.
  • Mix together evaporated milk and lemon juice and then stir it into the meat. Warm, but do not boil.
  • Serve over cooked noodles.
  • Do not freeze leftovers.
