MY MOM'S MEATLOAF RECIPE

My Mom's Meatloaf Recipe image

This is the best meatloaf, we always like to have extra glaze to serve with it at the table as well!

Provided by Connors Mama

Categories     Meat

Time 1h15m

Yield 1 Loaf, 6-8 serving(s)

Number Of Ingredients 9

2 lbs ground beef
1/2-1 cup onion, chopped
4 slices white bread, chopped in food processor
2 eggs, beaten
1/2 cup milk
2 teaspoons salt
1/2 teaspoon black pepper
1 cup brown sugar
ketchup, enough to make paste

Steps:

  • Preheat oven to 350*.
  • In large bowl mix beef, chopped onions, bread and half of the milk with hands.
  • Slowly add the remainder of the milk if needed - too much will make the mixture to runny and it won't form the loaf.
  • Shape into loaf and place in a glass 8x8 or 9x13 baking dish, I add just a little water to the bottom of the pan.
  • Bake at 350* for 45 min, cover the top of the loaf with the glaze and finish baking for 15-20 min longer.
  • Let the loaf sit 10-15 min before slicing.

MOM'S MEATLOAF

Mom's Meatloaf image

Lot's of meatloaf recipes out there, but what makes this one different is the brown sugar/soy sauce glaze that cooks over the top. This is my mom's recipe and I haven't found one better than hers. I had submitted it to the local newspaper a couple of years ago. Yesterday I ran into a lady and after the introductions she asked me if I was the one who had submitted a meatloaf recipe to the paper a few years back. I was stunned that she would associate a stranger with a recipe. Anyway she said that their family has really enjoyed it and they have given the recipe to all of their friends and they all love it. Wow, so I thought I would submit this one more meatloaf recipe so I coud spread the joy. Ha!

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 lbs ground beef
2 eggs
4 slices bread, crumbed in food processor
1 small onion, chopped
1 teaspoon salt
black pepper
1/4 cup ketchup
3/4 cup brown sugar
soy sauce

Steps:

  • Preheat oven to 350.
  • In a large bowl beat eggs.
  • Add onion, salt, pepper, Ketchup, ground beef and breadcrumbs.
  • Mix gently with a light hand.
  • Free form loaf in a sprayed 13 X 9 pan, lightly pressing the mixture down so it fills the entire pan ( a flat loaf).
  • In a small bowl place brown sugar; add enough soy sauce to make a thick sauce.
  • Pour over the top of the meatloaf and bake.

Tips:

  • Use a lean ground beef: This will help prevent the meatloaf from becoming too greasy.
  • Add some bread crumbs or oats to the meatloaf mixture: This will help absorb any excess moisture and make the meatloaf more tender.
  • Don't overwork the meatloaf mixture: Overworking the mixture can make the meatloaf tough.
  • Form the meatloaf into a loaf shape and place it in a baking dish: Make sure the baking dish is large enough to accommodate the meatloaf.
  • Bake the meatloaf at 350 degrees Fahrenheit for about 45 minutes, or until the internal temperature reaches 160 degrees Fahrenheit: Use a meat thermometer to check the internal temperature.
  • Let the meatloaf rest for about 10 minutes before slicing and serving: This will help the meatloaf retain its juices.

Conclusion:

My Mom's Fried Meatloaf is a delicious and easy-to-make comfort food that is perfect for a weeknight meal. The combination of ground beef, bread crumbs, eggs, and seasonings creates a flavorful and moist meatloaf that is perfectly crispy on the outside. Serve it with your favorite sides, such as mashed potatoes, green beans, or corn, for a complete meal that the whole family will enjoy.
