Time 12h15m

Number Of Ingredients 14

1 pound dried navy beans
8 ounces thick cut bacon (, diced)
1 medium yellow onion (, finely chopped)
2 cloves garlic (, minced)
1/2 cup plain tomato sauce or ketchup
1/4 cup molasses
1/2 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon prepared yellow mustard
2 teaspoons Worcestershire sauce
1 teaspoon smoked paprika
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
  • In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
  • Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
  • SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

MY FIRST BAKED BEANS

My First Baked Beans image

As a newlywed, I was asked to bring baked beans to an event at the Oak Ridge Sportsmen's Association. My parents were members there and were introducing me and my new husband to all their friends. So the pressure was on! I thought, how hard can it be to make baked beans taste good? What is it that I like in baked beans? This is...

Time 1h15m

Number Of Ingredients 10

4 1-pound cans pork and beans, drained
1 c ketchup
1/4 c mustard
2 Tbsp tabasco sauce
2 Tbsp worcestershire sauce
1/2 c brown sugar
1 tsp salt
1 tsp pepper
12 oz bacon
1 onion, chopped

Steps:

  • 1. Drain sauce from pork and beans. Reserve sauce until you see that you have enough. Place beans in a large dutch oven. Preheat oven to 375°.
  • 2. Stir together ketchup, mustard, tabasco sauce, worcestershire sauce, brown sugar, salt and pepper. Stir this sauce into beans. Sauce should come up to level of beans but not cover them. Add some of the bean liquid as necessary to bring it to the correct level. Stir well.
  • 3. Meanwhile, cut bacon into 2-inch pieces and fry with the onion in a skillet until about half-cooked. Stir bacon, onion, and drippings into the beans. Bake the beans uncovered for 1 hour. (If browning too quickly, may cover after 30 minutes.)
  • 4. More recent variation: I no longer use pork and beans for this recipe, instead I use fresh cooked navy beans, or canned navy beans. I've even found you can use the dry beans, but presoak them, and put this together without first cooking the beans. Cover and bake 2-3 hours until beans are tender. You have to watch the level of the liquid and add more if necessary.

Tips:

  • Start with dried beans. This is the most economical and traditional way to make baked beans. If you're using canned beans, be sure to rinse them well before using.
  • Soak your beans overnight. This will help to soften them and reduce the cooking time. If you don't have time to soak your beans, you can quick-soak them by boiling them for 2 minutes, then removing them from the heat and letting them stand for 1 hour.
  • Use a variety of beans. This will add flavor and texture to your baked beans. Some good options include pinto beans, navy beans, black beans, and kidney beans.
  • Add some aromatics. Onions, garlic, and celery are all classic additions to baked beans. You can also add other herbs and spices, such as bay leaves, thyme, or rosemary.
  • Use a good quality tomato sauce. This is the base of your baked beans, so it's important to use one that you like. You can use canned tomato sauce, crushed tomatoes, or even fresh tomatoes.
  • Don't overcook your beans. Baked beans are best when they're slightly firm. If you overcook them, they'll become mushy.
  • Serve baked beans with your favorite sides. Some good options include cornbread, mashed potatoes, or coleslaw.

Conclusion:

Baked beans are a delicious and versatile dish that can be enjoyed by people of all ages. They're perfect for a summer cookout or a cozy winter meal. With so many different variations to choose from, there's sure to be a baked bean recipe that everyone will love. So next time you're looking for a simple and satisfying meal, give baked beans a try. You won't be disappointed!
