Steps:
- Preheat the oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.
- In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Pour the wine into the bottom of the roasting pan.
- Roast the turkey for 1 3/4 to 2 hours, until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast. (I test in several places.) If the skin is over-browning, cover the breast loosely with aluminum foil. When the turkey is done, cover with foil and allow it to rest at room temperature for 15 minutes. Slice and serve with the pan juices spooned over the turkey.

Tips:
- Brine the turkey breast: Soaking the turkey breast in a brine solution for several hours or overnight helps to keep it moist and flavorful during cooking. To make a simple brine, dissolve 1/4 cup of salt and 1/4 cup of brown sugar in 1 gallon of water. Add the turkey breast to the brine and refrigerate for at least 4 hours, or up to overnight.
- Use a meat thermometer: A meat thermometer is essential for ensuring that the turkey breast is cooked to the proper internal temperature. Insert the thermometer into the thickest part of the breast, making sure not to touch the bone. The turkey breast is done when it reaches an internal temperature of 165 degrees Fahrenheit.
- Let the turkey breast rest: After cooking, let the turkey breast rest for 10-15 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful turkey breast.
- Serve with your favorite sides: Mustard-crusted turkey breast pairs well with a variety of sides, such as mashed potatoes, roasted vegetables, or a green salad. You can also serve it with a cranberry sauce or gravy.
Conclusion:
Mustard-crusted turkey breast is a delicious and easy-to-make main course that is perfect for any occasion. The mustard rub gives the turkey breast a flavorful crust, while the moist and juicy meat is sure to please everyone at the table. With just a few simple ingredients and a little bit of time, you can create a restaurant-quality meal at home.
