- To prepare Sauce.
- Crush garlic and mix with chicken stock and lemon pepper.
- Fry onion, garlic, chicken stock and lemon pepper untill onion is clear and spices are fragrant.

- If using pork tenderloin, slice in approx. 1/2 inch thick slices. Heat skillet, then add 1 T. olive oil Add meat and brown on each side, transfer to plate, cover loosely and keep warm. Over low heat, melt butter in skillet and add remaining olive oil. Add vermouth, mustard, and Worcestershire, and stir to loosen browned bits. Transfer the chops to the warm platter and keep warm in the oven. Repeat with the remaining oil and the remaining chops. Pour any oil from the pan. Reduce the heat to medium and add the capers to the pan. Cook for 1 minute. Add the wine, bring to a simmer, and cook until reduced by about half, about 2 minutes. Stir in the cream, vinegar, and 1âÃÂÃÂ4 tsp. salt and season with pepper. Simmer the sauce until lightly thickened, about 30 seconds. Remove from the heat and whisk in the mustard. Taste and adjust the seasoning. Pour some of the sauce over the chops on the platter. Serve immediately, passing the remaining sauce at the table. Serves 4.
