1 1/2 lb lean (at least 80%) ground beef
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
1 cup shredded mozzarella cheese (4 oz)
1 tablespoon olive oil or vegetable oil
1 package (8 oz) sliced fresh mushrooms (about 3 cups)
1 clove garlic, finely chopped
4 hamburger buns, split
1/2 cup pizza sauce, warmed

Steps:

  • In large bowl, mix beef, Italian seasoning, salt and pepper. Shape mixture into 8 patties, 4 1/2 inches in diameter and 1/4 inch thick. Press 1/4 cup of the cheese into a ball with hands; press flat into 3 1/2-inch-diameter patty. Repeat with remaining cheese. Place cheese patties on top of 4 beef patties; top with remaining beef patties. Pinch edges together to seal.
  • In 10-inch skillet, heat oil over medium-high heat. Add mushrooms; cook 4 minutes, stirring occasionally, until lightly browned. Add garlic; cook 1 minute longer. Remove from heat.
  • Heat gas or charcoal grill. Place patties on grill over medium heat. Cover grill; cook 11 to 13 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. During last 2 minutes of cooking, place buns, cut sides down, on grill until toasted.
  • Place burgers on bottom halves of buns. Top with pizza sauce and mushroom mixture. Cover with top halves of buns.

1 1/2 lbs ground chuck
1 tablespoon soy sauce
1 1/4 teaspoons fresh ground pepper
3/4 teaspoon salt
1 tablespoon butter
1 tablespoon olive oil
3/4 lb mushroom, finely chopped
2 tablespoons garlic, minced
1/4 cup green onion, sliced
1 teaspoon Worcestershire sauce
4 slices swiss cheese
4 large hamburger buns with sesame seeds, split
4 slices tomatoes
1/2 cup mayonnaise
2 teaspoons soy sauce
1 teaspoon Dijon mustard

Steps:

  • In a medium bowl, gently mix together the beef, soy sauce, 3/4 tsp of the pepper, 1/2 tsp of the salt.
  • Using generous 1/3 cup per patty, shape mixture into 8 (4 1/2-inch) patties 3/8 inch thick.
  • Refrigerate while preparing the stuffing.
  • Heat a large nonstick skillet over medium high heat until hot.
  • Add the butter and oil.
  • Heat until hot and butter is melted.
  • Add the mushrooms and cook for 2 min, stirring occasionally.
  • Add the garlic and cook for 8-10 min or until the mushrooms are browned and the liquid has evaporated.
  • Stir in the green onions, Worcestershire sauce, remaining 1/2 tsp pepper and remaining 1/4 tsp salt.
  • Let cool.
  • Mound about 1/2 cup of the stuffing in the center of 4 of the patties.
  • Cover with the remaining 4 patties, sealing the edges firmly by pressing together with your fingers.
  • Gently press the center of the burgers to eliminate mounding.
  • Heat the grill or grill pan to medium heat.
  • Grill for 5-6 minute.
  • Flip the burgers and grill for 5-6 min more, or until no longer pink in the center.
  • Top each burger with 1 slice of cheese, and grill for another min or so - until the cheese has melted.
  • Meanwhile, in a small bowl, whisk together all of the mayonnaise ingredients.
  • Place the buns on the grill, split side down, and grill for 30-60 sec or until lightly toasted.
  • Spread each bun with 2 Tbs of the mayonnaise.
  • Top with a burger and a tomato slice.

2 cups sliced mushrooms
1/4 cup finely chopped onion
1 1/2 lbs lean ground beef
1 tablespoon mccormick grill mates hamburger seasoning
1/3 cup shredded swiss cheese
6 hamburger buns
6 lettuce leaves (optional)
6 tomatoes, slices (optional)
condiments (optional)

Steps:

  • Heat butter in nonstick skillet over medium heat. Add mushrooms and onion; cook and stir 4 minutes or until mushrooms have softened. Cool completely.
  • Mix ground beef and hamburger seasoning. Measure twelve (1/4 cup) portions of beef. Shape into thin 4-inch round patties. Place about 1 tablespoon each of the mushroom mixture and cheese in cente of each of 6 patties. Top with remaining hamburger patties, pinching edges to seal filling. If necessary, lightly flatten with spatula.

1/2 pound lump crabmeat (or shrimp meat) diced

  • 1. In a small bowl, whisk together oil,vinegar, basil and rosemary. Place with mushrooms in resealable plastic bag, close and turn to thoroughly coat mushrooms. Marinate 15 minutes. 2. Remove mushrooms from marinade, reserve marinade. Place mushrooms in center of cooking grate on direct heat, medium heat. Grill 16 minutes, turning once halfway through grilling time and brushing with reserved marinade. 3. Meanwhile, a small bowl, mix mayo, lemon juice and zest and set aside. Melt butter and add crabmeat or shrimp and heat through stirring frequently. Toast buns. 4. Spread mayo mixture on bottom and top halves of each toasted bun. Place mushrooms, cap side down on bottom half of each bun. Fill caps with equal amounts of crabmeat.
