2 tbsp unsalted butter
1/2 tbsp olive oil
300g / 10 oz mushrooms (, sliced (Note 1))
Pinch of salt and pepper
2 garlic cloves (, minced)
1/4 cup (65 ml) white wine or rose (, dry (Note 2 subs))
1/2 cup (125 ml) chicken or vegetable broth
1 cup (250 ml) heavy / thickened cream ((Note 3))
1/2 cup parmesan (,finely grated (30g / 1 oz) (Note 4))
2 tsp fresh thyme leaves ((or 1/4 - 1/2 tsp dried))

Steps:

  • Heat oil and melt butter in a skillet over medium high heat. Add mushrooms and leisurely cook until golden brown - takes about 4 to 5 minutes. No need to stir constantly.
  • Just before they're done, add the garlic and a pinch of salt and pepper. Cook until garlic is golden (~ 1 minute).
  • Add white wine - it will sizzle! Stir, scraping the bottom of the skillet, for 1 minute or until mostly evaporated.
  • Add broth, cream and parmesan. Stir, then lower heat to medium so the sauce is simmering - do not boil rapidly, cream may split.
  • Stir occasionally and simmer for 2 - 3 minutes until it thickens. It shouldn't be super thick, this is a rich sauce.
  • Stir through thyme, adjust salt and pepper to taste. Remove from stove.
  • Serve over steak or other cooked protein. Toss through pasta, stuff into baked potatoes, serve with roast beef, chicken or pork, smothered omelettes. See in post for more ideas!

5 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
7 ounces common mushrooms, trimmed and sliced
1 tablespoon lemon juice
1 pinch of freshly ground nutmeg
1 pinch fine salt, to taste
1 pinch fresh ground white pepper, to taste

Steps:

  • Prepare a sauce bechamel:.
  • Melt 2 tablespoons of butter in a small sauce pan over medium heat.
  • Stir in the flour and cook for a couple of minutes.
  • Do not allow the flour to brown.
  • Gradually mix in the milk and bring to a low boil.
  • When the sauce is thick and smooth, stir in the nutmeg and pepper.
  • Taste for salt.
  • Keep the sauce at a low simmer until needed.
  • Prepare the mushrooms:.
  • Heat 2 tablespoons of butter in a fry pan over medium heat.
  • Add the sliced mushrooms, sprinkle lightly with salt and cook.
  • Stir often to prevent burning.
  • When the mushrooms start to release water, add the lemon juice and increase the heat to high.
  • When all the liquid has evaporated, add the mushrooms to the sauce.
  • Just before serving, off the heat, stir in the last 1 tablespoon of butter.

4 tablespoons butter
1 cup coarsely chopped onion
1 cup finely chopped celery, optional
1 1/4 pounds mushrooms, thinly sliced, about 7 cups
Juice of 1 lemon
1/4 cup flour
6 cups rich, unsalted chicken, veal or beef broth
Freshly ground black pepper to taste
1/4 cup dry Sherry wine

Steps:

  • Melt half of the butter in a large saucepan and add the onion and celery. Cook, stirring often, about two minutes. Add the mushrooms and lemon juice and stir. Cover and cook over low heat about 15 minutes.
  • Sprinkle the mushroom mixture with flour and stir to coat evenly. Add the broth and stir. Simmer, uncovered, about 10 minutes.
  • Pour and scrape the mixture into the container of a food processor. Process to a fine puree. Return the mixture to a saucepan and bring to the boil. Swirl in the remaining two tablepoons of butter and add a generous grinding of pepper. Add the wine and serve hot.

8 trout fillets, deboned and skinned
seasoned flour, for dusting
6 tablespoons butter
1 garlic clove, chopped
2 teaspoons chopped fresh sage
12 ounces sliced fresh mushrooms
6 tablespoons dry white wine
