Yield Serves 4

Number Of Ingredients 5

2 tablespoons olive oil
2 pounds mushrooms (such as button or cremini), sliced
Salt
2 leeks, sliced crosswise, rinsed well
1 tablespoon chopped fresh tarragon

Steps:

  • Put oil in a large skillet over medium heat. Add mushrooms, sprinkle with 1/2 teaspoon salt, and cook, stirring occasionally, until they release their water and the pan begins to dry out again, 10-15 minutes. Add leeks and cook, stirring, until they soften a bit, 2-3 minutes. Add tarragon and stir until fragrant, about 30 seconds.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and tools ready. This will help you stay organized and avoid scrambling later on.
  • Choose Fresh Vegetables: Use the freshest vegetables you can find for the best flavor and texture. Look for vegetables that are brightly colored and free of blemishes.
  • Slice Vegetables Evenly: When slicing the vegetables, try to cut them into even pieces so that they cook evenly. This will help you avoid having some vegetables that are overcooked and others that are undercooked.
  • Don't Overcook the Vegetables: Vegetables should be cooked until they are tender-crisp. Overcooking them will make them mushy and bland.
  • Use a Good Quality Cheese: The type of cheese you use will have a big impact on the flavor of the gratin. Choose a cheese that melts well and has a good flavor. Gruyère, Parmesan, and Cheddar are all good options.
  • Season the Gratin Well: Don't be afraid to season the gratin well. Salt, pepper, and garlic powder are all good choices. You can also add other herbs and spices to taste.
