My kids picked a bunch of mulberries from our tree and brought them in last night wanting me to make jam. I've never made it, so I went to the web to see if I could find an easy recipe. Most of the recipes used fruit pectin and A TON of sugar. Since I don't keep pectin on hand, and I did not want to use that much sugar, I kept...

8 c berries, washed, stems removed(i used mulberries)
1/2 c sugar
1/2 c freshly squeezed orange juice
2 envelopes unflavored gelatin

Steps:

  • 1. Sprinkle the gelatin over the orange juice in a small bowl and set aside to dissolve.
  • 2. Place the berries and the sugar in a saucepan. Mash the berries, making them as smooth or as chunky as you wish. I used a hand-held immersion blender for this, but you could probably just use a potato masher.
  • 3. Heat over med-high heat until boiling and cook for 1 min. Add the o.j. mixture, stir to combine, return to boil and cook 3 min.
  • 4. Remove from heat and allow to cool in pan for about 10 min. Pour into jars or freezer containers. Cool completely. Store in fridge for up to 2 weeks, or for longer in the freezer.
  • 5. **This is a very small amount of sugar compared to most jelly and jam recipes, but the jam was plenty sweet for us. Most recipes use lemon juice, and I think that using orange juice instead really compensated for the smaller amount of sugar since oranges are quite a bit sweeter than lemons.

Adapted from original recipe # 133147. First did with kids from Vera Court Community Center near Troy Gardens. All of the mulberrys were gathered using the old method of a big sheet on the ground under the tree with a very long pole and hooks on the end. Hook the highest branch you can reach and shake the hell out of the tree. THE KIDS WERE AMAZED. Mid to late June is the perfect time to gather the Mulberrys. Troy Gardens probably has 25 to 30 fruitfull trees. Now to just remember when they are ripe and then get there to gather them.

1 cup strawberry
3 cups sugar
8 ounces strawberry Jell-O gelatin dessert

Steps:

  • Cook any combination of berrys and sugar together for 10-15 minutes with a little water.
  • Add Strawberry Jell-O gelatin.
  • Label containers or bags with ITEM & DATE.
  • Pour into containers or freezer bags and freeze.
  • OR USE JELLY JARS AND PROCESS FOR CANNING.

3 cups mulberries (crushed & stemmed)
1/2 cup lemon juice
1 (1 3/4 ounce) package dry pectin
6 cups granulated sugar

Steps:

  • Prepare canner, jars & lids.
  • Combine mulberries & lemon juice.
  • Whisk in pectin.
  • Boil over high heat.
  • Add sugar & return to boil.
  • Boil hard for 1 minute.
  • Remove from heat; skim off foam.
  • Fill jars, leaving 1/4" headspace.
  • Wipe off rim; place lids, screw on bands fingertip tight; process in boiling water bath for 10 minutes.
