Yield 4

Number Of Ingredients 12

1½ to 1¾ pounds boneless skinless chicken breasts (or chicken tenderloins)
¼ cup extra virgin olive oil
1 teaspoon salt
1 teaspoon sugar
3 garlic cloves, minced
2 teaspoons paprika
1 teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon ground ginger
¼ teaspoon ground turmeric
¼ teaspoon ground cinnamon
⅛ teaspoon cayenne pepper

Steps:

  • Place chicken breasts between 2 pieces of wax or parchment paper and, using a meat mallet, pound to an even ½-inch thickness. (Skip this step if substituting chicken tenderloins.)
  • Mix all ingredients except chicken together in a small bowl or measuring cup. Place pounded chicken breasts inside a 1 gallon zip-lock bag. Add marinade to the bag, press air out and seal shut. Massage marinade into the breasts until evenly coated. Place the bag in a bowl in the refrigerator (to protect against leakage), and let the chicken marinate for 5-6 hours.
  • Clean grill and preheat to high. Place chicken breasts on grill, spooning marinade over top. Grill, covered, for 2-3 minutes per side. Do not overcook.

Time 13m

Yield 4 serving(s)

Number Of Ingredients 9

1/2 cup plain yogurt
3/4 teaspoon ground cardamom
3/4 teaspoon ground coriander
3/4 teaspoon cumin
1/2 teaspoon salt
1 pinch ground cloves
1 pinch pepper
8 boneless skinless chicken thighs
1/3 cup fresh coriander, chopped fresh or 1/3 cup fresh basil, chopped

Steps:

  • Oil grill and heat barbecue to medium.
  • In a medium-sized bowl, stir yogurt with seasonings. Open thighs. Add to yogurt mixture and turn to coat.
  • Lay chicken flat on grill. Barbecue, covered for 4 minutes. Baste with any remaining yogurt mixture. Turn chicken and continue to barbecue, covered until chicken feels springy when pressed, 4 to 6 more minutes.
  • Place on platter and sprinkle with coriander.

Tips:

  • For the best flavor, use a whole chicken that has been brined for at least 4 hours. This will help the chicken to stay moist and juicy during grilling.
  • If you don't have time to brine the chicken, you can simply marinate it in the yogurt mixture for 30 minutes before grilling.
  • Be sure to preheat your grill to medium-high heat before grilling the chicken. This will help to prevent the chicken from sticking to the grill.
  • Grill the chicken for 10-12 minutes per side, or until it is cooked through. You can check for doneness by inserting a meat thermometer into the thickest part of the thigh. The chicken is cooked when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest for 5-10 minutes before carving. This will help the juices to redistribute throughout the chicken.

Conclusion:

Moroccan grilled chicken is a delicious and easy-to-make dish that is perfect for any occasion.
