2 cans (14-1/2 ounces each) beef broth
2 cups chopped onions
1 can (14-1/2 ounces) diced tomatoes, undrained

1 tablespoon curry powder
1 tablespoon paprika
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1-1/2 cups golden raisins
Hot cooked couscous, optional

Steps:

  • Place flour in a large resealable plastic bag; add beef and toss to coat. In a large skillet, brown beef in oil. Transfer to a 5-qt. slow cooker. Stir in the broth, onions, tomatoes, wine and seasonings. Cover and cook on low for 7-8 hours or until the meat is tender. During the last 30 minutes of cooking, stir in the raisins. Serve with couscous if desired.

Tips:

  • To achieve the best flavor, select high-quality beef with good marbling. This will help ensure the meat is tender and flavorful after braising.
  • For a deeper flavor, brown the beef in a large pot or Dutch oven over medium-high heat before adding the other ingredients. This will caramelize the meat and create a flavorful base for the braising liquid.
  • Use a variety of spices and seasonings to create a flavorful braising liquid. Common spices used in Moroccan cuisine include cumin, coriander, paprika, cinnamon, and saffron. You can also add fresh herbs such as parsley, cilantro, and mint for extra flavor.
  • Be patient and let the beef braise for at least 2 hours, or until the meat is fall-apart tender. The longer you braise the beef, the more flavorful it will become.
  • Serve the braised beef with a variety of sides, such as couscous, rice, or roasted vegetables. You can also spoon the braising liquid over the beef and rice for extra flavor.
