3 cups cold mashed sweet potatoes (prepared without milk or butter)
1 cup sugar
3 large eggs
1/2 cup 2% milk
1/4 cup butter, softened
1 teaspoon salt
1 teaspoon vanilla extract
TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/4 cup all-purpose flour
2 tablespoons cold butter

Steps:

  • Preheat oven to 325°. In a large bowl, beat the sweet potatoes, sugar, eggs, milk, butter, salt and vanilla until smooth. Transfer to a greased 2-qt. baking dish. , In a small bowl, combine the brown sugar, pecans and flour; cut in butter until crumbly. Sprinkle over sweet potato mixture. 3 lbs sweet potatoes (about 5 large)
4 ounces Philadelphia Cream Cheese, softened
3 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups post selects cranberry almond crunch cereal, crushed
2 tablespoons butter, melted
1 1/2 cups jet-puffed miniature marshmallows

Steps:

  • PREHEAT oven to 325°F Place sweet potatoes on microwaveable plate. Microwave on HIGH 8 minute Turn potatoes over; continue microwaving 9 to 10 minute or until very tender. Let stand 5 minute Cut potatoes in half lengthwise. Scoop pulp into large bowl; discard skins.
  • ADD cream cheese, brown sugar, cinnamon and nutmeg to potato pulp. Mash with potato masher to desired consistency. Spoon into 9-inch square glass baking dish.
  • MIX cereal and butter in medium bowl until well blended. Stir in marshmallows. Sprinkle evenly over potato mixture.
  • BAKE 30 to 35 minute or until topping is golden brown and mixture is heated through.

2 (29 ounce) cans sweet potatoes
1/2 cup sweetened condensed milk
nutmeg, to taste
cinnamon, to taste
marshmallows

Steps:

  • Drain the sweet potatoes, reserving 1/2 cup of the juice.
  • Put the potatoes and reserved juice in a mixer and mix until well mashed.
  • Add the condensed milk and a few shakes of cinnamon and nutmeg (about four each, or whatever you like). Mix well.
  • Pour into a greased casserole dish.
  • Bake at 350 degrees for half an hour or until heated through.
  • Cover top with marshmallowes.

2 pounds sweet potatoes, peeled and chopped
1/2 cup granulated sugar
1/4 cup sweetened condensed milk
3 tablespoons butter, melted
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs

Topping:
1/3 cup of all-purpose flour
2/3 cup packed brown sugar
1/8 teaspoon salt
2 tablespoons melted butter
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°.
  • Place a pot of water on the stove and bring the water to a boil.
  • Peel and chop the potatoes into 1 inch cubes. Once the water is boiling put your potatoes in for 10 to 15 minutes or until the potatoes are soft.
  • Place potatoes in a large bowl; add sugar, sweet and condensed milk, 3 tablespoons of melted butter, 1/2 teaspoon salt, and vanilla.
